I think these boxsets are brilliant. Dipping into manga can be very daunting. You find a couple for sale, but their never books 1 & 2, you have no idea how many books there are, how many series. This is definitely the way to go.

i love demon slayer, need to read the manga and i heard there is more funny parts in it then the funny parts in the anime.
I prefer the look of the Anime...

I think one piece is finishing up right, so I might wait until they make a one-piece complete box set, and I better be about $1,000.
Not going to happen,they already released box sets 1-4 now they will finish with box set 5
Oda has stated that he plans to finish One Piece around 2025-2026. Then you gotta wait for the chapters to be compiled into volumes, so that's about four more months. Then it takes Viz a year to release the English volumes. So you're looking at around 2026-2027 for it to be available complete in English. And that's the best case scenario provided nothing happens to Oda in the meantime.
And English speaking countries have it good. You're on 106 out of 107 currently available volumes, while we in Poland are on volume 80.
