    Pignoli Cookies:
    7 ounces almond paste
    ½ cup granulated sugar
    1 egg white
    ⅛ tsp almond extract
    ¼ tsp salt
    1 cup pine nuts
    Process:
    1. Preheat your oven to 350 F.
    2. Slice up the almond paste and place into either a food processor or electric mixer with a paddle attachment. Give it a quick blend until it looks crumbly. (If you are using an eclectic mixer, the mixing process will be a tad longer than using a food processor)
    3. Next add in the sugar, almond extract and salt and blend together.
    4. Separate and lightly whisk the egg white until frothy then add to the mixture. Blend until it forms a thick smooth paste. Make sure to scrape down the sides of the bowl periodically.
    5. Scoop the dough and roll each one into a ball in the palm of your hands.
    6. Roll each ball of dough in the pine nuts then line them on a baking sheet with some parchment paper about 2 in apart.
    7. Bake in the oven for about 18 minutes or until the pine nuts and the edge of the cookies have a golden color.
    8. Let them cool completely, dust some powdered sugar if you would like, and enjoy!
