French Chocolate Macarons Recipe

  • French Chocolate Macarons - delicate chocolaty cookies filled with chocolate ganache.They taste absolutely divine, pretty easy to make and they are perfect for Christmas table or as holiday gifts.

    Ingredients
    Makes about 25 sandwiched macarons
    Macaron Batter
    1 cup (125g) powdered sugar
    1/2 cup (50g) powdered almonds
    3 tbsp (25g) unsweetened cocoa powder
    2 large egg whites (66g), at room temperature
    pinch of salt
    5 tbsp (75g) granulated sugar
    Chocolate Ganache Filling
    1/2 cup (120g) heavy cream
    4 ounces (120g) bitter sweet chocolate, finely chopped
    1 tbsp (14g) unsalted butter, optional
    1 tsp instant coffee, optional
    1. Preheat oven to 350ºF (180ºC).
    2. Line two baking sheets with parchment paper and have a pastry bag with a plain tip (about 1/2-inch, 12 mm) ready.
    3. Grind together the powdered sugar with the almond powder and cocoa so there are no lumps; use a blender or food processor. Then sift the mixture into a large bowl and discard the larger lumps.
    4. Using a mixer beat the egg whites until they begin to rise and hold their shape. While whipping, beat in the granulated sugar until very stiff and firm, about 2 minutes.
    5. Fold the dry ingredients, in two batches, into the beaten egg whites with a rubber spatula. When the mixture is smooth and there are no streaks of egg white, stop folding and scrape the batter into the pastry bag. (standing the bag in a tall glass helps if you’re alone).
    6. Pipe the batter on the parchment-lined baking sheets in 1-inch (2.5 cm) circles evenly spaced one-inch (2.5cm) apart.
    7. Rap the baking sheet a few times firmly on the counter top to flatten the macarons, and remove air bubbles. Allow the macarons to sit for 20 to 30 minutes until a “skin” forms and they are no longer wet when lightly touched.
    8. Bake them for 10-15 minutes. Let cool completely then remove from baking sheet.
    9. To make the chocolate ganache filling: in a small saucepan heat the cream and instant coffee if used. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth. Stir in the butter. Let cool completely before using.
    10. Spread a bit of batter on the inside of the macarons then sandwich them together.
    11. Let them stand at least one day before serving, to meld the flavors. Serve macarons at room temperature.

      After I learned to make them I'd never buy them again.

    I made these today and they came out perfect. I added the coffee to the ganache and it's really rich. The only thing I changed was the chocolate, I used semi-sweet instead of bittersweet and I'm glad I did. To anyone having trouble with this recipe, you need to follow it exactly. I measured everything using the weighted measurements she provided. I followed everystep exactly and the cookies came out perfect. Keep trying.

      @@rabiaali3214 I do the trick where if you are able to create a figure 8 with the batter, with it consistently flowing, that is when you should stop. You have to be careful not to over mix! I've tried this with lemon, pandan, blueberry, strawberry, and vanilla filling and they've turned out great.

      You should really wait at least a day before eating it , everything happens when you let it rest in the fridge for at least 24h , the ganache will get somehow mixed with the macaron and then you will get the real texture of macarons "crunchy on the top and creamy and chewy inside" . if you eat macarons right after they get cooked it won't be nice at all .

      Maddie Cole yeah, they're supposed to be room temp. I left mine outside for an hour because I was too lazy to leave em out a day before. Also, idk if this contributed to my success, but I put he bowl that I used to whip the egg whites in the freezer.

      then you found your problem..... they NEED to whip up to stiff peaks. otherwise, they wont bake correctly

    When you have every single ingredient except for the almond flour but you have normal almonds but they're your mom's and you use them anyway and she yells at you and eats all the macarons you made that weren't even that good but you appreciated it anyways since someone ate your attempt at making food without burning the house down :')

      Milan Radunov Maybe you didn't let them dry for long enough before baking. When the surface of the macaron hardens, it forms the feet when it bakes 😄

      +Christine Lee I think you can use sweet chocolate. But for macarons already super sweet, if you like it you can use it. I would suggest you use unsweet chocolate.

    Just tried these. They came out picture perfect. If you r looking for a good macaron recipe that you will get the first try, these r for you. Just a few tips. Make sure u have very stiff pics (put the bowl over Ur head and if they r stiff they will not fall), when u fold the batter, fold it until u can make a figure 8 with Ur spatula without the batter breaking. And I personally baked mine at 320°f for 15 minutes.

    Hello! First of all, I love your blog and channel! I'm constantly inspired by your videos. I've tried several of your recipes. All of them were total success. I 'm 14 and I've been baking for almost 3 years now. I love macarons. So of course, i've tried to bake them several times. I personally prefer the Italian Meringue, but it is very time consuming and requires a lot of preparation. So much as I crave macarons, I'm too lazy to age the egg whites and all.
    So today I came home from school and I was totally worn out. But since baking is like my escapism, i decided to give this recipe a go, though I'm very sceptic, haha.
    And yes! As always! They came out 95% perfect! Some of them crack. I think it is the humidity of the place I live, it took literally 3 hours to dry and still, some did crack.
    One thing I notice, however, is that the batch that was baked on the silicone mat didn't have very nice feet as that of the parchment. But overall, thank you so much!!! I love it.

    I made this the other day, it came out amazing! Not too sweet, and love the chocolate flavor. Small tip, if the ganache is too liquidy for you, use a whisk or hand mixer to whip the ganache into a fluffy chocolate cream.

    I tried this recipe today, but what happen is my cookies didn't get a dry layer. Also, I baked them for 13-14 minutes at 350 F, but they turned out hard.

    I tried those macarons yesterday and I did everything like the recipe said but nothing worked out 😂 the batter was waaaaay to thick and 180°C was definitely too much to bake them 😪😪😪

    i made this recipe and the feet spread outwards and it was a bit too crispy. personally i would do 325 for 13-15 minutes for best results but everyones oven is different! these are my first non hollow shells so i now realize the problem :))

    wow, just wow. I thought it was going to be insanely difficult and everything has to be perfect, but I made them kinda eyeing some ingredients, (I still don't recommend eyeing ingredients just in case it fails) and the came out amazing!!! they didn't look as perfect as the ones in the video, but they still looked like professional, and I'm 12!!! I really recommend making these! when we went to the store the almond flour was really expensive, but I just took 1\2 cup of skinless slivers of almond and grinded it in the coffee grinder (which I cleaned out really well) and it worked just the same. also, I used Hersheys cocoa powder and it was a lighter batter, and for some reason it was way thicker and airyer, but when I tapped it, it all went away. so if that happens to you don't panic, I think it will work out fine. honestly, I was like,"it failed, my batter failed"...but it didn't after all!! it create the skin and I popped it in the oven, and BOOM! The most amazing macaroons! sorry if this was confusing, but all in all, make these macaroons and they are amazing and don't panic if something goes a little wrong. 😀

    Currently making these, however, I’ve been waiting well over an hour and the shells haven’t harden they are still moist to touch. Not sure why. The coffee infused ganache is delicious, definitely gives it more dimensions.

    i need help!
    i followed every single step but my macaron inflated without feets
    and my macaron's top surface cracked like if there was drought
    how can i fix this problem next time?

      If your macarons had no feet, you might have over mixed the batter, or not let them sit enough before baking. I normally let mine sit for at least an hour. If your macarons were dry and cracked, you under mixed the batter. I usually add third of the mixture, then do 20 folds, until all of the dry ingredients are mixed in. Hope this works!

      This time, I'm pretty sure I know what happened. I actually tried this reason, and I think the no feet problem occurred for two reasons. One, were your eggs room temperature? Two, did you beat until soft peaks? Hope this also helps!

      depending on the humidity in your area you need to let them more to form the skin

      Amelia Leong Don't use aged egg whites... Use them as fresh as possible!!! It doesn't matter of they are cold!
      You could be messing up with the meringue... You want stiff peaks!
      Its 2 egg whites to 1/4 cup of sugar!
      Also when folding you want the right consistency!!!

    they made it wrong.... you see how it was kinda difficult it is to take off it need to be in the oven for abt 1 minute until they are easy to take of

    after making hundreds of this macaroon, finally! in my 8th attemp i was able to make it perfect😂 but anbut 8-12 burn -_- and the rest (about 60) is perfect😁

      Would be better to put them into a fridge because of the cream, that's in the filling. They could turn bad if you leave them just on the counter.

    Here's a tip, To avoid contaminating your egg whites while making macarons, you buy just egg whites in a carton at Walmart, I learned this yesterday.

      Actually, that is the best thing to do since there are times when liquid egg whites will not wear pop into a stable meringue. Just take the time and take out the yolks by hand

      It is the ganache made from 2:47 but you need to let it set before filling the macaron shells

    Well, no doubt tht the recipe and the video are awesome and you have given very clear instructions. However, I failed making them. Fyi, it was my first try. The macaroons just got stuck together while baking and they turned out completely flat! The ganache was too liquidy and idk y coz I followed exactly as given in the recipe! Anyways il give this another shot. Btw, awesome recipe! Thanks

      if the macarons got too flat, that means you over-mixed the batter, it was too runny. You have to let it thicker. For the ganache, you have to let it harden, for a few hours if necessary, until it reaches the desired piping consistency. You can refrigerate it and keep checking on it, to set faster. I usually like to make the ganache fillings before starting to make the macaron shells, so it has time to set.

    Good recipe however i found that you should put your macarons in the oven at a lower temperature and a less amount of time if you don't want them to harden and burn at the bottom.

    I am 12, and I tried to make these macaroons, I tried tasty fool proof video didn't work, tried this one
    Came out perfect👌, but I'm a noob and didn't make them perfect circles but it has the feet and a crunchy outside and a soft inside, the recipe is great and easy to follow unlike tasty's. Great for people who love baking and will give them a nice easy challenge

    I TRIED THEM TODAY, THEY WERE A FLOPPPPP! I Made It In Three Batches. The First One Just Melted In Just 8Mins Of Baking At 150°c And The Second One Came Out Good In 5mins Of Baking, But A Few Had Cracks And The Lower Part Wasnt Hard.
    And The Final Batch Didnt Even Puff Up😑

      You probably need to fold longer. It can take a really long time but keep folding until it comes off the spatula in ribbons. Kind of like lava. My arm hurts by the time I get there, but it's important!
