Love, love, love this video! All the recipes look great, easy and delicious! Im going to rewatch it right away. One of my go to breakfasts is overnight oats. In a deep bowl, I put 1/4 cup rolled oats, 1/4 cup oat bran, 1 T ground flaxseed, 1 T ground chia seed, sprinkle of cinnamon, 1 T cacao powder and 1.25 cups almond milk. I make about 5 bowls at a time. Each morning, I heat it for 4 minutes in the microwave, then stir very well. Then I add fruit on tops, usually fresh or frozen and defrosted berries. It’s so satisfying. I would love more videos like this. Thanks!

Loving this subject, very much needed. I cook a loaf of seitan every week, Cheap lazy vegan’s recipe is the fastest and easiest and delicious. Then I use it for quick sandwiches, put in quick soups too. For a quick soup I use beans in my magic bullet, mixed with broth and water and also powdered broth mix from Well Your World and some nooch and salt substitute (Bensons Table Tasty) blend and add to cooked frozen veggies and some chunks of tofu, for a rich, thick quick creamy soup. And of course oatmeal in the microwave! I put an old take out chopstick in the bowl with the oatmeal and water or plant milk, which keeps it from boiling over in the microwave. I’m also queen of semi homemade food. My favorite is to buy a plain bean burrito, no cheese from Taco Bell. Microwave some potatoes, and Trader Joe’s frozen , peppers and onions, open that burrito and add the potatoes and peppers, make a quick salad, mostly just greens, cherry tomatoes and cucumbers and you have an amazing quick mostly healthy meal!

As a single person, in general, I prefer to batch cook. If I am going to the effort of getting out all the ingredients, equipment and cleaning, then I want to get at least two days worth of meals from the effort! Usually I aim for 8 portions if it's freezable. However, if there isn't anything suitable pre made then I want something really fast. I've also been ill for the last year (unrelated to diet) so making food has become much more difficult. As you said, there's a number of reasons why someone would only use a microwave, so I'm glad to see it acknowledged. A wfpb based diet is a cook heavy diet and that can seem like a lot of work to certain people, particularly newbies. Hopefully, this video can give people a few more quick options. Yay!
I hope you do another version of this with new recipes down the road. I have access to all the cooking implements but I don’t always have time to use them. Throwing a quick, healthy meal in the microwave is a great option.

I wonder if I could make the breakfast sandwich chickpea egg in a silicone muffin pan instead of a single ramekin? Maybe make a dozen and let them cool and then freeze to reheat when needed. I'm gonna give it a try and will post my results

Hi, great video, will definitely be trying a few of the recipes. I am Julie from the Uk. I have made my porridge (oatmeal) in the microwave for quite a few years. My favourite is with grated carrot, grated courgette (zucchini), pear or apple, cinnamon and flax. Call it my carrot cake porridge and gives me more veg!.
I use frozen quinoa, canned chick peas (microwave both) and a bunch of fresh veggies (cucumber, cabbage, shredded carrots and spinach) Top with peanut sauce. I also use a damp paper towel over my tortillas in the microwave to steam them and make them softer.
Great idea for a video! When we were homeless and had to live in a Bed and Breakfast room with no kitchen facilities, we managed to get a microwave for our room. It was hard to work out healthy meals for the kids which could be made in a microwave. This video would've been really helpful. My student son will find these recipes really useful too. In the summer - definitely chopped peach, along with some blueberries in oatmeal. And yes, I always do it in the microwave, but hadn't thought to add banana etc before cooking. Will try it!

What a superb idea for a video !!! I am in love with my microwave. Obviously for reheating EVERY MEAL I make ! But I have discovered it for cooking my potatoes ! OMG what a game changer ! I have a silicon container and lid and you just put a bit of water and your potatoes and cook for 6 to 8 min and it is done. As for the IP, you can just go do something else and it does not heat your entire house ! I also have some special bags to cook potatoes in. I always melt my chocolate in my microwave and use it many times a day. Thanks again for the video ! I have been marathon re-watching all your cookbook review videos to get some inspiration and some entertainment !!!
Our quickest meal is couscous topped with black beans, chopped onions and tomatoes and avocado or guacamole. My husband sprinkles soy sauce on his. To make couscous and bring water to boil, add couscous, turn off heat, cover, remove from heat, fluff with fork and it's done that quick.

I make rolled oats in the microwave every morning. Put in a large bowl: 1/2 c old fashioned rolled oats + 1 c water. Nuke for 2 minutes, uncovered. Take out and stir. Done. Top with whatever you want.
The bowl for oatmeal needs to be taller than the one you used because I have had it cook over the side on occasion. I always make my rolled oats in the microwave. I also use flax and cinnamon with ½ cup oats and one cup water and microwave for 3 1/2 minutes. Adding frozen blueberries is wonderful!

I make everything from Impossible ground meatloaf and chili to mashed cauliflower and gravy or sauteed shredded cabbage ahead of time then microwave to heat up. Not usually into breakfast however, found a great option called "Zeroatmeal" by DalsFoods. You just add hot water and let it sit for a couple minutes. Love the content!

This morning I cut up an apple, cooked my oats for two minutes, add the apple, a box of raisins, maple syrup, and flaxseed. Cooked for two more minutes then added cinnamon. Topped it with unsweetened soy milk. SO DELICIOUS!!!

Thanks for the great ideas! I like to put fresh cherries with cocoa powder and a drizzle of maple syrup in my overnight oats or fresh mango, pineapple and a pinch of toasted coconut.
Also, to add to my last comment. As someone who had to rely solely on a microwave for a year, you can cook almost anything in one if you aren't fussy about texture and have the patience to cook one ingredient at a time for certain dishes!

Love Pique teas! Have you tried the peach black tea? Just shake it up in a water bottle. I love their matcha as well but curious as to how you’re drinking yours. Are you just drinking it plain? Is it good that way? I typically have made more of a latte with oat milk and a little sugar but would like to ditch those calories. I’ve been brewing matcha genmaitcha loose leaf tea from Rishi tea in the mornings which is really good if you care to try it but I still add a small amount of sweetener to it. Maybe it’s a matter of weaning off the sugar😬

Hi from Wisconsin. I love the striped socks. Question: Your yogurt always looks so creamy when you dollop it on. How do you make your yogurt? I use 2 probiotic capsules to half a quart of 9% protein soy milk. Mine tastes fine but does not look nearly as appetizing.
l do my oats in microwave every morning, in water 2minutes , l don`t wait, lol , l then put date paste on it frozen berries and l add a bit more water. i stopped using cinnamon as l heard it affects the liver , and my liver enzymes were rising, so l am testing out not having it
Help! I made the oatmeal in the microwave, and it BLEW UP. Good thing I tried this at home and not at work. Is the steam supposed to be able to get out or stay inside? Maybe I need to lower the level of heat? Any suggestions?

I have made oatmeal in the microwave for years. My secret is to put in any amount of oats you want then add plain water in a bowl (just below the oats) as you’d normally do. But! Then the secret is to cook it for 4 mins at 50%. That cycles the microwave off and on .. which allows the oats to rise then fall before they overflow the bowl. No need for a cover the oats will cook perfectly. Then add the banana … not a fan of microwave bananas-).
I'm an engineer who works in the field of Radio Frequency (which microwaves are a part of). They are perfectly safe to use, in fact they retain more nutrients as opposed to some other cooking methods.

The mug brownies work well in them and pop right out when cooled off a bit but still fudge warm …yum and easier clean up .

We often get ours from a bakery nearby, but sometimes have to rely on the whole wheat ones from the grocery store that do have some oil in them.

The microwave is the only way I cook my oats! I mix up my fruits and seasonings. I’ve used fresh, frozen, dehydrated, canned, and freeze dried fruit.
This morning I cut up an apple, cooked my oats for two minutes, add the apple, a box of raisins, maple syrup, and flaxseed. Cooked for two more minutes then added cinnamon. Topped it with unsweetened soy milk. SO DELICIOUS!!!
Comment to soften the the canned chickpeas microwave them first in the aquafaba just like for a smoother hummus 😋

Thanks for the great ideas! I like to put fresh cherries with cocoa powder and a drizzle of maple syrup in my overnight oats or fresh mango, pineapple and a pinch of toasted coconut.

Also, to add to my last comment. As someone who had to rely solely on a microwave for a year, you can cook almost anything in one if you aren't fussy about texture and have the patience to cook one ingredient at a time for certain dishes!

Love Pique teas! Have you tried the peach black tea? Just shake it up in a water bottle. I love their matcha as well but curious as to how you’re drinking yours. Are you just drinking it plain? Is it good that way? I typically have made more of a latte with oat milk and a little sugar but would like to ditch those calories. I’ve been brewing matcha genmaitcha loose leaf tea from Rishi tea in the mornings which is really good if you care to try it but I still add a small amount of sweetener to it. Maybe it’s a matter of weaning off the sugar😬

Hi from Wisconsin. I love the striped socks. Question: Your yogurt always looks so creamy when you dollop it on. How do you make your yogurt? I use 2 probiotic capsules to half a quart of 9% protein soy milk. Mine tastes fine but does not look nearly as appetizing.
How long does the Aquafaba last in the fridge?
At least a week. Give us it the sniff test.

l do my oats in microwave every morning, in water 2minutes , l don`t wait, lol , l then put date paste on it frozen berries and l add a bit more water. i stopped using cinnamon as l heard it affects the liver , and my liver enzymes were rising, so l am testing out not having it

Help! I made the oatmeal in the microwave, and it BLEW UP. Good thing I tried this at home and not at work. Is the steam supposed to be able to get out or stay inside? Maybe I need to lower the level of heat? Any suggestions?
It could be that your microwave runs hot - so start with less time, stir, put it back in if needed... sorry to hear that!!!

My oatmeal boils over if I cook it for more than 1.5 minutes. I tried it in the microwave at work and the same thing happened.
It sounds like you're using too much water maybe... try reducing it next time...

I use a 4 cup Pyrex cup to cook my little 1/2 cup rolled oats.
Stick a wooden take out chopstick in the bowl while cooking, something about breaking the surface tension, and a bigger bowl too
I have made oatmeal in the microwave for years. My secret is to put in any amount of oats you want then add plain water in a bowl (just below the oats) as you’d normally do. But! Then the secret is to cook it for 4 mins at 50%. That cycles the microwave off and on .. which allows the oats to rise then fall before they overflow the bowl. No need for a cover the oats will cook perfectly. Then add the banana … not a fan of microwave bananas-).

I'm an engineer who works in the field of Radio Frequency (which microwaves are a part of). They are perfectly safe to use, in fact they retain more nutrients as opposed to some other cooking methods.
