Yeah....it`s 3:08 in the morning, and I could go for a nice big plate of this right now....a lightly-toasted and buttered Portuguese roll and a big cup of coffee would be perfect ! :-)

Yummy breakfast! Not to be a know it all, but if u accidentally do add too much seasonings you can take them away. Add a splash if water and roll it around to absorb some of the seasonings, then pour it out. Definitely works better on things like ground beef, not quite as well on potatoes as it could sog a few out. But I would say better than enedibly over seasoned or salted.
Where do you get that chorizo? I get mine from the Mexican store and it comes in a plastic casing as soon as you put it in the pan it breaks down into more of a chorizo paste then i add beans or eggs. I had this chorizo skillet at denny's and it was more solid chorizo bites like yours. So if you could tell me where you get yours i would greatly appreciate it. Breakfast hash is my favorite adding chorizo would be fantastic By the way if you add tortillas and queso fresco i think youil be pleasantly surprised.
I got mine at a Store called Wegman's which is only available on the East Coast, I believe. However, many other grocery stores sell this type of chorizo. I have had the type that falls apart too and it is good but not right for this recipe.

This was a wonderful recipe. I also fried the potatoes because i had oil from cooking the night before. Great recipe and thank you!
Cooking raw potatoes in a pan like this is tricky. You don't want to burn the outside of the potato but you don't want to leave an uncooked inside either. So I've learned a trick that might help. Boil your cut potatoes for five minutes to precook them. They still get crispy when you pan fry afterword but they don't take as long to cook so they are much harder to burn. You'll thank me later.
an even easier and quicker way is, just cook your chorzo and then crack two or three eggs and scramble them with the chorizo, but just add about 2 inches or so of chorizo, but if you want it a bit more spicier, just add a little more chorizo to your liking, and then warm up some flour tortillas or some corn tortillas and some coffee and your off to the races.

That is a good idea but yes, I'd be careful with potatoes as you don't want them to retain too much moisture.

Never add oil to your chorizo, it fries up in its own rendering fat. U could actually add a lil water on the pan and cover it for a bit.
I still like to add a small amount of oil to get things going but yes, you don't need much when using chorizo.
