So do those clips around the sunroof just need a good pull? I'm about to do this to my 2006 Touareg, and I've seen some people in forums saying that area was somewhat difficult and needed some specific pry tool.
Pry tool would come in handy, I've done so many I just know where to pull down on. That's pretty much all I'm doing around most sunroofs, is a pulling away motion to release it from those tiny metal clips that hold it tight against the roof. Careful not to crease or bend the headliner. Some are tight!

Hey Reece! I’m about to restore the headliner in my cayenne aswell,,,What size was the material that you ordered?? This is my first run lol
Unfortunately we haven't yet saved any measurements for this model, best to measure this one up yourself prior to purchase 👍
Where did you get the material and how many yards? I have a 05 Cayenne with the same interior color in this video.
Because we don't do these cars that often we haven't stored any info on measurements for this particular job. So gets hard to suggest the correct measurements and fabric,
I think on that day we used our #6 light oyster/thawn flat knit fabric

I think he uses thumb tacks? That’s what I did and what mine looked like
