I love seeing young chefs who will carry on the traditions of the older chefs and family. There's a reason great restaurants like this one can last for 100 years.

I am very happy for the grandson and grandfather to be able to pass on the family tradition. The grandson getting 8 years experience as a chef for a hotel will definitely be useful.
Let's hope the grandson brings his own flavor of life as he accepts the duty and honor of being the fourth generation.

It seems Japanese people live to work. Here we dream of retiring and doing whatever we want but that doesn't seem to be the case in Japan. Maybe its the fact that the business is their own and passed down over time that makes them so passionate. My employers couldn't care less about me as a person and the moment I can afford it I am gone.
Over 60% of retirement age Japanese people continue to work because the pension plans are insufficient to cover the average living costs. Many can't afford to retire and will continue to work as long as possible.

When traveling to Japan, I have to always go to tourist restaurants just so I can order.
The Google Translate smartphone app works well for situations like this. You can take a picture of the text and the app will translate it into your language of choice.
