Try this, sauté some diced daikon in bacon grease or butter until tender, adding seasonings to your liking. Once the daikons are close to soft add some peppers, onions, mushrooms, or whatever you like, and finish cooking until the veggies are done to your liking. Use this as the base for a breakfast bowl, topping with sausage or sausage gravy, scrambled or jammy eggs, a bit of cheese, and some sriracha mayo. I made this once and it was so delicious! My recipe: "Dehydrated Daikon Radish Fries".... 1. Buy a food dehydrator (average cost $50 on Amazon). 2. Cut your radishes into french fries. 3. Soak in salt for 45 minutes. 4. Dry the fries off and put them in the dehydrator - let them hang out there for 13 - 14 hours. 5. Separate a serving size (one tray) and bag the rest for later. Spray the fries you want to cook with your favorite cooking oil. Pop them into your air fryer till golden brown. Flip them over and repeat. Taste one first to see if they need more salt. Season to taste 😋 I'd love to see you make them. Works great for Daikon chips too. Congrats... 200K is right around the corner! 🥳
I've made Lasagna with daikon and it is delicious!!! I cut the daikon into 3 inch pieces and use the mandolin slicer lengthwise so I get squarish pieces that I boil and use as lasagna noodles. I've made this several times and it is sooo declicious!!!

Daikon tastes a bit more like turnip than radish, IMO. My husband and I really love this Korean beef and daikon soup and he honestly thought it was potato until I told him it wasn’t. I could tell it wasn’t potato, but he couldn’t. When cooked, it really doesn’t taste much like radish.
I make japanees style recipies alot. Mirin is very sweet.(it is a sweet cooking wine) If you don't have it or don't want to use it. I use saki and alulos.
I saw a video several years ago that showed dehydrating cut Daikon to a certain moister level helped crisp them up. I'm not sure what social media the video was on.
I absolutely love Rumaki (the bacon wrapped water chestnuts) but find wrapping them to be really tedious. As the daikon has a larger diameter, wrapping should be less of a problem. In addition, daikon is much lower in carbs. Thanks for that substitution. I, too, have found fries made from daikon to be a bit too soft even when air fried, though it works better as wedges (in the air fryer) which are typically softer inside than regular fries. My favorite fries are celeriac or rutabaga (Swedes). Obviously, I don’t have them very often because both are a real pain to peel. When I do have the urge and feel I have sufficient stamina to deal with them (😵💫), I prep a lot of fries, divide into servings and freeze. As I’m the only one in my family doing keto, I am confident that no one else will even try them.
I replace the potato in my beef stew with radishes. My local grocery stores do not carry daikon. May have to grow some this year to try in my beef stew.
Hi ladies. Have you ever thought about dehydrating Daikon? I guess it would alter the carb count somewhat, but I'm thinking about buying a food dehydrator and trying low carb vegetables in it, then frying them up. Hopefully it would make them super crispy like fried potatoes 🤤
I actually just dehydrated some to use as a potato substitute in homemade backpacking meals. They stay wet until they turn into little rocks. I have not tried to rehydrate them yet, though.

I wonder if boiling the diakon fries first so they're cooked, dried, and then doing the fryer or air fryer could help them crisp up? Idk. Otherwise they just need some breading, maybe unflavored protein powder.
i use daikon when i make my keto corned beef hash. i cook the corned beef. ( i use uncured due to allergies to nitrates). then i take the cooked corned beef, toss into the nutribullet with some onion or shallot. i dice the daikon fine, and fry in butter until they are soft. then i add the corned beef mixture i've blitzed until it's the consistency of the canned / storebought. fry until crispy on one side then flip.
I wonder if you could cook the Dicon fries in the air fryer till they are cooked then roll them in egg and put a coating on them and place back in the air fryer to crisp the coating to make them crispy.

Great ideas! I think as french fries, they need to be cooked in air fryer, 5-6 times, and rotated. Has anyone tried mandoline sliced daikon that is deep fried like potato chips? Or even in an air fryer? Would thinner slices crisp up easier?
Just a thought. How about dipping your daikon fries in egg with a little cream, then in Indigo Nili's protein breading before you fry or air fry? Spray with oil before air frying. Please give that a try.
Great video!! I too have found that Daikon works in "wet" recipes - soups, stews, boiling etc. The moisture content is way too high for deep frying or air frying. It's impossible to get crispy!

Frying suggestion: coat the potato like, steamed/cooked Daikon sticks in seasoned eggwash and then almondflour or any kind you would put around a Schnitzel. Then airfry

Just made the Au gratin and my son loved it. It is actually the first time he did not realize it was low carb substitute. Evey other recipe i ever do low carb he can tell. I dried out the radishes after boiling by putting in the oven to really get excess water off. I made the cheese sauce while they were drying for 5-10 minutes.

I wondered if daikon hash brown size that you squeeze in a towel might result in crispy results. I saw someone do that with mushrooms and the water that came out was astonishing.
I prefer using turnips in place of potatoes. You can make a breakfast hash, mock potato soup, stew, au gratin, anything you use a potato for. (Not fond of it mashed but doable). I use the smaller ones which are less bitter. Give em a try! 😊
Try looking on Instacart. If you download the app you can search what products/ produce is at what store. You don’t need to use the app to order. I do it all the time just for searching for ingredients local to me :)
Daikon is good in brothy Soup. if you ever watch Midnight Diner series, It's one of the ingredients in the soup he makes in the intro. It cooks up nice and soft and has a nice texture if you let it simmer. I can't imagine it being crisp since it has so much water. maybe if it is breaded. I'd like to try your gratin recipe sometime, I have a daikon just waiting for that.

Fries perhaps cut smaller and cooked in a basket-type shelf at a level where air can circulate from the top and bottom should work out some better - and don’t have to flip them as often, maybe not at all. You ladies are looking wonderful and seem so healthy!!
Next time try breading the daikon fries with some pig-co crumbs or your favorite keto breading then maybe you’ll get a crispy outside and soft inside 😊
I'm wondering about a keto batter to put the daikon in and fry it in oil? It's not the right time of year yet for it in my little part of Australia... so I can't actually experiment... does it make a good hashbtown? Looking forward to making Maltese soup with this one day closer to winter
I think the only way to get the crispness you're looking for would be to deep-fry the Daikon. That wouldn't be cost-effective. In the restaurant, we made twice fried potatoes, but also deep-fried. Essentially frying them half way, and putting them in the freezer overnight and fry them once more. time-consuming and impractical, but I think that's the only way to get the crispiness you wanted. Those other recipes, I'll be trying for sure since I no longer eat potatoes, thanks to you two 🤣
I wonder if you could steam the daikon until tender first (because boiling tends to keep it moist) and then fry briefly in super hot oil or air fry at a very high temp just to crisp the outside. Next time I go to the Asian market, I’ll get some daikon and try it.
I have a small dehydrator. I will see if I dehydrate the fries first and little while if it will pull some moisture out and if I can make the fries crispy. Stay tuned! 😂

I've tried mashing them. For me they didn't get super soft even though I cooked them for a long time, so they were weirdly chunky and very wet. I tried adding bamboo fiber and even a little dehydrated mashed potato to thicken them up but it didn't work. I used the mash for shepherd's' pie and didn't love it. If I try again I will pressure cook them to get them softer, then bake them on low for a bit to dry them out. I think they do need plenty of seasoning (chicken bouillon, cream cheese, garlic, parsley), but they have a neutral enough flavor to work if I can get the texture right. Daikon is a really good substitute in "potato" soup, though.

I sliced them with my mandolin seasoned, and added olive oil and put in the dehydrator and they became crispy chips. They were delicious 😋

You could try drying the Daikon fries in a food dehydrator for a while before frying them, to draw out the moisture.

Hand sanitizer/rubbing alcohol gets rid of capsaicin from fingers. Wash with soapy water and then use the sanitizer.

It's not radishy at all! It's worth a try. I did a sort of daikon au gratin and it was great 😀

When you boil it, does it still taste like a radish or a blander taste?
Not really it loses that taste for the most part and absorbs other flavors

I live in Chicago and neither Jewels, Whole Food or even Target in my area carry daikon.

I can usually find them at Fresh Thyme. You can typically find them at Asian markets too.

I tried the daikon "potato salad" and it was acceptable taste wise but got super watery. Has anyone found a solution for this ?
Did you try mashed daikon? Did I miss that mentioned?

@@ketotwins I bet you could cook and mash it and then stir in the new Keto Chow 'Baked Potato' to make an amazing mashed fauxtato. (once Keto Chow has it back in stock)
I've tried mashing them. For me they didn't get super soft even though I cooked them for a long time, so they were weirdly chunky and very wet. I tried adding bamboo fiber and even a little dehydrated mashed potato to thicken them up but it didn't work. I used the mash for shepherd's' pie and didn't love it. If I try again I will pressure cook them to get them softer, then bake them on low for a bit to dry them out. I think they do need plenty of seasoning (chicken bouillon, cream cheese, garlic, parsley), but they have a neutral enough flavor to work if I can get the texture right. Daikon is a really good substitute in "potato" soup, though.
All of these recipes sound AMAZING! I am sad to hear about the fries, though.
