    I watched this old video to see what was suggested for making pastry. I was happy to see that the fat used was half margarine and half lard which is exactly what I used in the early 1950’s. The margarine was Stork brand and I think this came to be popular because butter was rationed in the war and some time afterwards. Margarine is out of favour nowadays and cannot even be found in Canada except the soft tub versions. 😊

      I still use Stork for pastry. In the UK you can get it in tubs or in a foil wrapper. The one in the foil wrapper is harder.
      I also use a brand of fat called Cookeen instead of the lard.
      Half-stork, half-cookeen, makes the most lovely pastry.

      Thank you! I have made Delia's flaky pastry for years. Its fool proof however I only make it for special occasions....as Delia said for Sausage rolls it is perfect!

      @TheRenaissanceman65 Thankyou....I thought I might have remembered the origional showing of these but sadly I don't. Anyway it's great to see them now. I love some of the modern shows but I feel like I Delia demonstrates in more personal way and that she is doing it for us and not to impress the camera....if that makes sense.

      James Bullock I love her latest Christmas special, the newest from 2009, which I hadn’t seen, where she cheekily says, “now professional chefs wouldn’t approve of this but we’re home cooks so it doesn’t matter.” Truer words have never been spoken! Saint Delia is so awesome. Since my mum and I moved to America, we hadn’t seen the special from 2009 and were catching up on UA-cam and it made us both laugh because it’s why we love Delia. She’s brilliant but she’s so personable and IDGAF about her recipes when it comes to making things easier for everyone. Anyone can do it. I’m a 2nd generation Delia fan, I grew up with my mum always having one of her recipe books open or just making something from memory because she’d done it so many times.

    Never really saw the point of all the celebrity chefs that came after.
    Delia was all about getting your average person to cook. No fuss or twirls, just straight info presented in a soothing way.

    Can we get some love for the fact that the UK hadn’t converted to the metric system yet and she’s using imperial measurements for temperatures? “...Gas Mark 8, 450 degrees Fahrenheit or the equivalent in Centigrade.” I LOVE how 80s this is.

    You can't beat homemade pizza. I don't know how anyone can stomach Dominoes slop and other takeaway or eat in pizzas
    are nothing special ( even wood fired pizzas can taste average especially if they are not cooked for very long ).
    We stopped buying ready made pizzas a few years ago because some of them don't taste of anything and I was the only one
    who liked Goodfellas deep pan pizzas but if you can make it yourself at least you know exactly what't in it.

      Oui, nous avons encore beaucoup à apprendre de nos cousins ​​français qui apprécient toujours vraiment et exigent une très bonne cuisine. Delia a probablement fait plus que quiconque en Angleterre pour éduquer la nation sur les bases. Je vous encourage à visionner quelques-unes de ses dernières vidéos qui ont des recettes anglaises traditionnelles qui, je suis sûr, impressionneraient même un Français - en particulier l'épisode sur les puddings anglais!
