+Ahmed Syed aapko steam karna hai. ek large pan me pani li jiye. Iske upar apka prepared dahi ka pan rak khe. Aur usko uncovered bake kare. Tab take bake kare jab tak Islam edge set ho but center thoda jiggly ho.. chill for few hours..

+Ankita Basu u can do without caramelization as well. Boil the milk n condensed milk together until it becomes thick. As it will be thick more, it will get light caramelization color. Then set the yogurt. It will take more time. But the mishti doi will come out more creamy n tasty..
the trick you here applied was little wrong, you must put a wooden spoon in cross upon the pan, I've tried that, and it works. anyway your recipes are awesome thanks a ton for sharing your recipes with us, I love them :)
Hi Sharmila! I would gladly share with you my result of your lovely mishti doi!, but have yet to learn how to post with a photo. I don't have the app for instagram, and still teaching myself somethings here on fb. I didn't fully succeed as I needed to boil the milk further to half, so was slightly runny, unless placed in the freezer for few mins. I stored your recipe in my mind and carried it out. This was the same way I learned to cook from my mum when I was just 11/12 yrs of age. I added a little of green cardomom to my doi and it taste like kulfi!

+Ahmed Syed semi liquid hain to aap ko thoda aur time Dena chahiye tha. Canada me shayed abhi temperature down hai.. aur barish ke mausam me bhi mitha dahi set hona difficult hai.. Aap slow bake bhi Kar sakte ho.. 150 c for 2 or 3 hours.. to aap ko tension nahi rahega kyun dahi set nahi hua
Pikachu Akshi Actually you can use jaggery instead of sugar as that is the traditional way to prepare mishti doi and i have made it myself using it! You will need to grate the jaggery finely and place it with the boiling milk until it all disolves. You will also find using the jaggery gives it that authentic colour and taste. The best way to make mishti doi is to steam it - "bhapa mishti doi" look at these recipes to find out how to make it!

+Ranen Biswas u should give it more time, use more tok doi. Sometimes it takes more time depends on the weather.. if the weather is cold or rainy it takes more time. Put it on warm place by covering thick cloth..
if you have oven .then easily you set doi.I make it every day.just preheat the oven at lowest temperature.mine at 140c.then cover the pot n place it in the oven n don't open or check before 5hrs.after that place it in the refrigerator.experiment with the curd first by adding previous doi 1spoon to 500 ml of milk.if it doesn't set properly then increase the amount by 1/2 spoon.

u may be kept it for long time outside.. The moment u see it has set, you should put in the refrigerator.
