Try adding chocolate (900) and roasted (1200-1400) malts separately at 161 temperature pauses. Mashing time 15-20 minutes. This will give a bright shade of taste without excessive bitterness. You need to get about 5.5-5.6 pH before fermentation. At the end of boiling. Stop heating 10-15 minutes before the end of cooking. Take 5 grams of soda to begin with, quench it with boiling water in a glass, and slowly pour it into the wort. Be careful, this reaction is very violent, do not rush. Stir well and check the pH. I think you can do it with 10 grams of soda. This will give a wonderful body and bright malt in the sip. After the pH reaches 5.5, turn on the heat and continue boiling. There will be a laundry smell for ~10 minutes, this is normal, it will dissipate very soon. Later you will figure out the volume of soda for your brewery and can adjust the water profile. As a result, we will get a very clean, very readable, bright game of malt in the beer (if we don’t crush everything with hops)

I am one of those people that find certain kinds of stout refreshing. I have a Rye Dry Irish recipe I always brew in the summer that is a slammer when you get tired of pilsners and lawnmower wheat beers.
Yep, the standard costco or grocery store oats. Just make sure you get the quick oats so that they have already gone through starch gelatinization and will be good to add to the mash without doing any extra work. Cheers!
