I think you should bottle that and sell it, you’re onto something there I think you should do a whole series of foods where you try to recreate fast food/McDonald’s but call it “Matt Donald’s”
That “fake” banana flavor came from a type of banana that no longer exists. Long story short: commercially grown banana plants are clones of each other. Great for uniform product. Bad if the banana blight comes to call and wipes out the entire species of banana. Which is what happened to the bananas that used to smell/taste like the flavoring we know today. That artificial flavor is all that is left of that banana type. Also, that’s why supporting banana variety at the market is important. Generally the standard banana is always just one bad blight from not existing anymore.

sauce:
1/2 cup quality mayonnaise
2 tablespoons dill pickle relish (you can also use sweet pickle relish and omit the granulated sugar)
1 tablespoon finely minced onion
2 tablespoons natural ketchup or barbecue sauce , optional for a different flavor variation
2 teaspoons yellow mustard
1 teaspoon white vinegar
1 teaspoon granulated sugar
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
