Gnocchi Ripieni with Mushrooms, Parmesan & Thyme | At Home with Us

    INGREDIENTS
    For the dough
    1 1/2 pounds (about 2 large) russet or other floury potatoes
    1 cup (6 ounces / 150-175 grams) all-purpose flour, plus more for dusting
    1 large egg, beaten
    1 teaspoon kosher salt
    1 dash nutmeg, freshly grated (optional)
    For the filling
    2 tablespoons unsalted butter
    1 pound cremini or similar mushrooms, cleaned and sliced
    5 garlic cloves, minced
    1 teaspoon fresh thyme, leaves only
    1/3 cup (3 ounces) firm whole milk ricotta
    1/3 cup (1 1/2 ounces) Parmigiano-Reggiano, finely grated
    1 tablespoon (1/2 ounce) mascarpone cheese (optional)
    1 pinch salt and pepper, plus more to taste
    For the butter sauce
    1/2 cup unsalted butter
    1 dash gnocchi cooking water
    2 sprigs fresh thyme, plus additional leaves for garnish
    1 pinch Parmigiano-Reggiano cheese
    For pan frying
    1/4 cup olive oil or clarified butter
    1 splash extra-virgin olive oil, for drizzling
    1 sprig fresh thyme and mint leaves, for garnish
    1 pinch freshly cracked black pepper and fennel pollen (optional), for garnish

    Now THAT is how you make fluffy gnocchi! Excellent recipe, if a bit fiddly. The fried ones make it worthwhile, though, they look delicious. You can of course just boil the gnocchi unstuffed and top with a creamy mushroom sauce, but that is a slightly different dish. Will try this for sure. 👍🏻

    I’m from Slovenia. We call them duplings and traditionally fill them with whole plums, sometimes apricots or blueberries and also marmalade. After they’re cooked we quickly sauté them in butter and breadcrumbs, then you sprinkle a little bit of sugar on them. My grandma made them regularly and froze them for us, so we always had some in our freezer, always.

      You can also make garlic oil by starting off with cool oil, add garlic cloves, put on a low simmer until garlic just starts to go brown, then cool, strain, and bottle the oil.
      Then, and this is the good part, take those garlic cloves, put them in a food processor, pulse until minced, add cream cheese, and pulse until mixed, use that for stuffing your pasta. Or use pesto mixed with cream cheese.
      Both make wonderful dips too.

      Like the lady said: "pick your favourite filling", and a cooked meat paste (with a bit of those mushrooms or some caramelized onion, maybe) sounds really delicious.

    She is the bomb! She never fails to bring it. Always a great and easy pasta recipe that you never get anywhere else. I’m going to make this using the awesome Kabocha squash instead of potato it’s a dry and delicious squash.

    You always know a gnocchi recipe is shitty when they feel the need to pan fry them.
