It's weird that one of the best recipes/instructions for making caramelized onions is not, in fact, in a video specifically about caramelized onions. Please snip that part and make it it's own video! It looks SOOOO good.

I find a fork doesn't give you enough space to fully roll the gnocchetti and they end up a little more dense than hollow. But it's certainly an option!

There's no GF substitute for semolina per se, but you can use your favorite GF flour mix with a bit of xanthan gum, eggs, and water - GF dough needs more hydration than this one. Adding eggs gives it a bit more of the bite you get when using semolina. :)
I really like pasta made from corn flour. When there is sauce on top it tastes the same to me :) You can always skip the step where they make their own pasta. :)
I'd say 1-2 days tightly wrapped in the fridge tops (the less time the better). Before reusing, bring back to room temp and re-knead briefly so the dough can firm up a little.

Couldn't be more accurate.
She suggested rolling gnocchi on a crystal glass or a colander... but didn't suggest a fork? That's THE go-to gnocchi board replacer!

Absolutely. Just not sure how many kids would be into sherry vinegar and caramelized onions, but I hope one day mine will be!
