    -Chicken thigh 500g
    -Bread flour some
    [Brine]
    -Water 500ml
    -Sugar 1tsp (5g)
    -*Salt 1tsp (5g)
    *If you use kombu salt, even better
    (Blitz 4g kombu and 50g salt in a food processor)
    [Teriyaki sauce]
    -Kombu (Dried kelp) 2g
    -*Water 50ml
    -Sake 2tbsp (30ml)
    -Mirin 8tbsp (120ml)
    -Sugar 1tsp (5g)
    -Soy sauce 80ml
    -Corn flour 2tsp (6g)
    -*Water 1tbsp (15ml)
    *Or use 4tbsp (60ml) of water instead of prepping 50ml + 15ml, and then you can just mix all together except soy sauce.

      People learning to cook can use your basic tips on making anything even if it's not Japanese food. I like your foil tip when cooking the chicken to allow the steam to escape. The lid builds up steam condensation which makes everything mushy.

    This is the best channel to teach people how to cook. Much of the people in the US are enamored with Japanese food but find they only eat it when they go out to restaurants or buy it frozen in a package. Where I live, now all of the Japanese restaurants are own and run by Chinese. I don't like their way of making Japanese food. Thankfully I grew up in a Japanese family so I can make my own Your step-by-step construction and explanation as well as what's in the description box (which I just checked out) is awesome. Thank you for all of the time that you put into making these videos. Arigato goziamasu. ❤️

    I made this today. I followed every step precisely, except I added a bit more sugar in the sauce. The texture of the chicken is awesome! Crunchy skin and juicy meat. I cooked this for my parents, and my mom who is a cook and is critical when it comes to food loved it. このレシピが最高!すごく美味しかった。チャーシューとカレーも試した。いつもありがとう!😊👍

    the kombu was the real game changer here. ive tried other chicken teriyaki recipes w/o kombu, and they weren’t as tasty as this one from chef’s labo. thanks for this recipe, chef!

      my gas stove is very cheap one from Kmart😅
      It is accurate enough, but not so strong.
      So if you have decent stove, that most probably works better than mine🤣🤣🤣

    just a question. i often make chicken teriyaki and I always add ginger and garlic on my sauce. is it wrong or just another version of teriyaki chicken?

      So you might feel the brown sugar when you eat it.
      But if you only got brown sugar in your pantry, you can always try and see how it goes😉👍

      I get it from Tokyo mart in Northridge!!
      They have Korean brand which is about $7-8 for 2-3 big kombu!!
      (They have Japanese brands too)
