He is acting like that for views obviously, no one would watch it if the judges were polite and just saying “it needs more salt” the reason people watch this is because of Judges’ unpredictability. As to Joe being extra salty in Italian version in my opinion is because Italy is a more aggressive country than the US, the audience enjoys it more.
