- Whitney was allowed to set the key ingredient for this elimination test centered around Chinese cuisine which happened to be Mandarin Oranges. All dishes were left insulted by Gordon Ramsay and Joe Bastianich from Mandarin Orange Chicken with Stir Fry Vegetables to Asian Orange Stir Fry besides the Ginger Mandarin Chicken that seemed to pass their test, nobody else understood the flavours demanded of them.

my uncle used to owned and run 2 seafood business (before he fell ill because of stroke attack), he never cook whatsoever. he got a point tho.

Joe has all the reason to judge the food, he’s a food critic, he has tasted more food in high class restaurants than most ppl, so yes, he knows what the food should look and taste like, it doesn’t matter if he can replicate it or not^^ sure, his personality is garbage, but I don’t get u ppl questioning his position
Joe never gives constructive criticism like Gordon or Graham..He either just 1) personally attacks the cook 2) throws food into the trash and just rants about rthe status of masterchef
To be fair, Gordan started off similarly as well. The thing is he was told to play it up because it brought up ratings for the Amercian shows. Even then, he eventually mellowed down once this was more well known. The show direction could be trying to create something similar since it will bring more clicks (it worked for me. I clicked because of the absurd title).
I'm not a fan of Joe, but he also makes constructive comments. it is simply impossible to have such a famous mother who built her empire on cooking, to be the owner of successful restaurants and wineries yourself and at the same time not understand food and its taste.
They just needed the judges to play three archetypes for ratings.
A kind-hearted man who likes to eat in the person of Graham. A rich aristocratic furious snob in the person of Joe. And Gordon, who, against the background of the other two judges, acts as a kind of golden mean. The most experienced gives the most constructive comments , while at different moments of the show can show strong anger characteristic of Joe ( when teams screw up in team сhlng ) but also sometimes act as a nice kind person like Graham encouraging participants who give up under pressure

He does all of that for the cameras and the audience
He's not actually a chef...he isn't capable of giving constructive criticism...he has no actual cooking qualifications or experience 🤷
@@jimmylittle9393 As if the title of Chief automatically guarantees that a person will constructively criticize? You don't need the title of Chef to understand that there is a lack / excess of spices in the dish, or some flavors, that the dish is undercooked, overcooked, the sauce does not combine, etc. In such a case, only the richness of the palette of flavors and dishes that you have tried is important. And believe me, him it's not small
His mother built her own culinary empire . He owns restaurants in different parts of the world . A person with such a background as he simply cannot help but understand food, even if he himself does not often approach the cooking processes And Gordon gives constructive criticism no more than Joe or Graham very often his comments are also full of some emotional descriptions instead of constructive criticism. Just like Joe has enough comments on the case, he comments on the choice of spices, the roasting of the dish and so on. This is not to mention the fact that God forbid a third of the judges' reactions get into the show because of the timing. And they like to insert Joe's reaction precisely to catastrophic dishes, the catastrophism of which is visible even by one kind and is understandable to everyone from the author to the judges and the viewer.
Joe is the reason why i wake up every day knowing that i dont have to be good at what im doing to be success. its 21st century and if you cant be super good just be lucky

The reason why Joe never gives constructive criticism and just yells like a Karen instead is because he himself isn't even a chef. He doesn't know how to give constructive criticism because he can't cook himself. A lot of times when he tried, Gordon actually disagreed with him which was pretty embarrassing lmao

Well, one can refute that you don't need to be a cook to critique food. You just need to know the technicalities of dishes and how they're made.

joe can't even make italian food. just look at his demonstrations on masterchef. the first being a risotto where he his shallots came pre-diced, the second being a pasta where he invited a chef to make the pasta while he "stir fries" some veggies in a pan before dumping the pasta in.

I was just watching an episode of Master Chef Canada where Joe was a guest judge. he said stuff like - you used a bit too much garlic, the sauce was a bit too sweet. again, clearly you just have no idea who Joe Bastianich is. he wouldnt be on the show if his credentials werent impeccable. his critiques are clearly not wrong just by looking at crappy dishes shown in the video. what you can take issue with is his blunt and aggressive way of dealing with the bad dishes.

I grew up in Hong Kong, authentic Chinese here. The only dish that looks like what we would really have in a local restaurant or would make at home, is 3:42. The others all look American Chinese instead of actual Chinese

And the purpose of stir fry food that pair with rice is to eat comfortably, so this looks way too big. Still, I would say this looks almost like what I will get at a typical Chinese restaurant

And mostly it's an act of comedy, so he is being sarcastic half of the time. And he doesn't put down people in the way Joe does
As an Asian, I don't know why American love to use chicken breast. Everyone knows drumstick and thign tastes better. Why not use them? You want to make a good Chinese cuisine, the key is fire. Big fire and fast stir-fry make vegetables crunch and nice colour with fire flavor. You don't even need many ingredients or sauce. Just garlic goes in hot pan for 20sec then put cabbage in. Stir-fry 2mins, seasoning with salt and done.
Thing about cooking shows like this is that the cooks almost never get to just pick something out of the pantry as they please. The reason a lot of the dishes had orange was probably because of some missing context here.

Seasoning sticks better on chicken breast making it taste more delicious imo. Only time I find drums or wings better is if its seasoned like KFC. A thicker and crunchier coat on it.

Joe is often the least credentialed judge especially in culinary proficiency so I feel like he over compensates by playing the villain.

Yeah looking back on those early seasons he was a wannabe Simon Cowell. He seems to have mellowed out in the newer seasons.
He tries so hard to be hells kitchen gordon. The thing he is lacking is gordons passion on food and knowledge about cooking
Honestly, it is also kind of difficult for a Chinese to use oranges to make a savoury Chinese dish. Except for making a soup or steam dish, there are not many options.

Whitney (the first contestant) won a mystery box challenge, which gave her the advantage of choosing 1 of 3 ingredients for herself and all the other contestants to use in the elimination challenge. The theme for the next challenge was Chinese food, probably set by the producers. The 1 of 3 chosen ingredient happened to be oranges.
Note that this was the first season and most of the contestants were very inexperienced in cooking Chinese food. but a challenge is a challenge and they have to at least serve something which could be served in a restaurant according to the judges' standards.
Of course they all gave the best America could offer - orange chicken😂
Graham never said anything negative does he? 80% of this video is just Gordon and Joe blasting the chefs’ confidence and spirits in their cooking.
He did (although the video clips focus on the other two when it comes to trashing candidates). He's just more like the "I'm not mad at you, I'm just disappointed" type.
Ive seen him say negative stuff many times. he is just less arrogant about it.
I've definitely seen him criticize before or him telling a cook that he thinks what they are doing is a really bad idea. Gordon outside of Hell's Kitchen where he plays it as a screaming lunatic (Show sucks honestly and is the only one where he's just really unlikeable and almost seems to want or expect people to fail) is a brutally honest guy that gives it straight and then either laments or elates at the situation depending, but I've always gotten the impression he wants to see contestants do well and put there best food forward and is along for the ride with them.
Joe....I don't really know what to say but he's hard to take seriously with how he plays up the personal attack stuff and just seems to be trying to kill people's confidence rather than get them to realize an error so they'll learn from it one way or another which is how Gordon comes across on this show when he's telling someone there dish is just plain bad.
They should figure it out themselves.
I like how these judges are using fork and knives to taste the dishes despite there is a chopstick nearby the plate...

As a Chinese American kid with who grew up with a relatively traditional household in terms of food, this video was extraordinarily painful...
I can sort of agree... but at the same time, these are home cooks and I don't even remember ever seeing a single authentic Chinese dish using oranges/mandarins other than using its skin. As a result, the home cooks were tasked with something super tricky. Home cooks are more amateur cooks so their knowledge couldn't be as broad as a professional cook. The show did them dirty. Coming from a Chinese person myself
What bugged me was saying she plated with 20 minutes to go when the food sometimes sits up to an hour before they try it doing different takes.

Isn't "Chinese cuisine" a bit of a misnomer to begin with? I mean, there are so many regions and provinces in China, each with their own specialties and local twangs. Sure, I know that there are some common grounds, etc., but still.... It's a bit like the Balkans, where the same overall idea or concept comes in so many regional variations and interpretations that there's no "one, real" recipe: đuveč, gjuveč, güveç, ghiveci ...... ćufte, kjufte, köfte, keftedes, sarma, sogan dolma, sarmale, dolma..........
Why do they put orange in every Chinese dish? There are so many different kinds of Chinese dishes that do not require oranges. Most of our dishes in Asia don't even have oranges in them.
Because its the chosen ingredient and so must be used in the dish that they prepare
I am from Singapore and my ancestors were from Mainland China. I would consider myself relatively familiar with Chinese cuisine. I could be wrong, but oranges are rarely paired with chicken as a main dish as far as Chinese food goes. Oranges as desserts sure, or toppings at best - but very rarely in the form of "orange chicken" that western countries are familiar with! Just sharing my two cents' worth😊
I think the mistake is that we don't use mandarin straight fresh. We use Dried Orange skin (chenpi) for orange recipes, if there is any oranges involved. most of the time citrus used is either lemon (way more use than oranges). Fresh Oranges are usually decorative.

I've eaten in a lot of chinese restaurants here in the Philippines, and they rarely, if ever, serve orange chicken. Lemon chicken, now that's a dish we quite like. Also correct me if I'm wrong but having just plain rice on the side of Chinese food instead of fried rice(preferably yang chao) is kinda like a sin, isn't it?
@@abird9387 not really. plain rice is fine for alot of people especially people that have sensitive taste buds. They would use the plain rice for "diluting" the salty tastes. plain rice is pretty common when serving for saucy sides like curry chicken and sweet & sour pork

If Joe were to eat in Philippines carinderias, he will suffer an indigestion, nervous breakdown ,extreme shock, cry a lot, very angry and violent, pass out,vomiting due to bad cooking. A stretcher is needed for him.
What makes Masterchef Canada better than Masterchef USA is that the judges worked or owned a Michellin-starred restaurants and they don't destroy the confidence of the home cooks. I bet Joe can't cook a decent Masterchef class Chinese dish too aside from the simple stir fry dishes out there.

MC Canada Season 1 was it's absolute brutality. Judges we're very strict. Same with Season 2, but in later seasons they turned their temper down.

I'm Chinese and my version of mandarin orange chicken will have the chicken dredged in flour and deep fried/lightly fry-off before being tossed with mandarin orange sauce with a bit of toasted sesame seed.
If you are really chinese then you will know there is no such thing as mandarin orange in any chinese dishes. It just does not exist. Its some b@$tardized american version of chinese cooking. Here in Asia mandarin orange is a fruit. Not a cooking ingredient.

Whoever thought it was a good idea to pair chicken and orange for "chinese" food straight up fucks over everyone there. No Chinese food I know use fresh mandarin orange as part of the main ingredient. At best you eat the oranges after you're done eating the main course.

They were required to use oranges in this challenge. Yeah it's weird AF. I think the producers only had Chinese take out before so they thought this is an authentic ingredient.
Yes this is what I was going to say, more about the drama than the cooking, something like my kitchen rules , a show here in Australia although I heard it’s improved but I’m not sure as I still don’t watch it. I’m sure people love all the drama but I prefer a show about the cooking not the contestants that constantly get ripped apart by the judges. It’s very demeaning but I guess that’s what you sign up for.

I remember one season, they said we want you to surprise us, amaze us, be bold, break the mold, etc. words to that effect.
and then they made the contestants emulate Joe's mother's pasta recipe, and when one cook deviated from it, he chewed him out.
But to be fair (if I remember correctly, the filling was cumin and bell pepper?), Nona said the taste isn't harmonious, so it probably doesn't taste good. I wouldn't trust Joe if he said that, but it's Nona herself, so maybe yeah.

Chinese food even in Luxurious restaurant tend to
1 big portion but with various flavor.
2 serve with rice like always serve them with rice
3 a fried noodle mixed together, with meat and veggies.
4 to cut time chinese chef usually an instant seasoning powder broth, or pre cook everything before an actual cooking.
And not to mention it is common for chinese dish to include stir fry chicken with stir fry broccoli in it. As long as they add oyster sauce a bit of water to lighten the sauce up, salt and pepper it will already make a good chinese dish
