  • Today we are going to tackle a problem that I see effect people in the kitchen on a daily basis and I think needs to be addresses immediately.
    And that problem is this;
    YOU’RE LINING YOUR TINS LIKE AN IDIOT!!!

    Now don’t let my boyish good looks deceive you, I have been cooking, and teaching people how to cook, for quite a long time, and during that time I have seen a HUGE range of… let’s call them “interesting” techniques, from novice cooks and seasoned chefs alike, in an attempt to line a tin.
    One thing these techniques have all had in common is that they are all bloody stupid.
    So if you are guilty of perpetrating any of these terrible techniques it’s time to change your ways and step out of the shadows of kitchen bafoonery and start lining your tins like your not totally brain dead.
    In this video we are going to step away from the normal format and instead cover some of the more common idiotic tin lining techniques that I often see and how we can rectify them.

    Cutting To Size
    So before we even get to the different types of tins, lets tackle the biggest problem I see when it comes to lining tins and that is; cutting the greaseproof paper to the correct size.
    You would not believe how many people just cannot seem to grasp the simple concept that if you cut your greaseproof too small there won’t be enough of it to cover your tin properly.
    You see them rearranging their paper, pulling at it, desperately willing it to grow and magically stretch to just the right size.
    This is never going to happen, give up, get rid of the tiny piece of greaseproof and start again.
    Now if you are someone who always makes your greaseproof too big instead, opting to cut it to size after you have got it into your tin, you may think you have dodged a bullet.
    Well think again, all this shows is you too have given no thought to lining your tin and your more often than not you’re just wasting all of the paper you trim off anyway.
    Either way, whether you cut the greaseproof paper too small or too big, it comes down to the fact you are being too lazy to take the extra 30 seconds you would need to make sure you cut the paper to the correct size.
    So before we even START talking about lining any tins, we need to agree together that we are going to stop being idiots and make a concerted effort to make sure we cut the greaseproof paper to the correct size for whatever tin we are lining.
    Ok now we’ve tackled what i consider to be the main culprit for idiotic tin lining now we can tackle the tins them selves.
    Now when it comes to lining your tin if you are guilty of any of these techniques you too have been lining your tin like an idiot.
    Forcing it in - This method is exactly how it sound and is the epitome of ridiculous tin lining, the paper wrinkles up, folds over itself, and can rip and tear. Completely lazy & totally ridiculous.
    Cutting Corners - The name doesn’t actually do this technique justice for the amount of work involve. But trust me it is a complete waste of time, this technique leaves the corners of your tins unprotected allowing cake batter and sponge mixture to seep through and stick in the tin causing you a world of pain later on. Do yourself a favour skip this technique all together.
    Base Lining - Sometimes base lining is necessary, like on a baking sheet for cookies but in a square or rectangular tin with edges that you don’t want your baked good to stick to it is a total waste of time so stop it. So stop being surprised that if you trace the base of a tin and cut that out, that it doesn’t come up the sides when it comes time to line it.
    Base lining is really good for circle tins but this is making a cartouche for crying out loud! It is not the way to line a circle tin. AAAAAAAH
    Also if you do this and always start from the centre, stop it! You are just wasting a huge amount of greaseproof.

    I need to confess, I have never lined a tin, ever, when I bake cakes and make cheesecakes. I have always found it daunting to get it right. Now, after watching your videos, I feel ready to take on the challenge! Thank you Al. Here hoping my cheesecake's base and sides don't stick to the pan. 🤞

    Good tutorial. Thank you. I've been baking since long before there was UA-cam and it used to be that you just sorta had to make it up. Many of us come by our mistakes honestly and I don't think the video would've been lacking if the audience wasn't called idiots so many times.

    Bonus tip: If you wet the paper and crumple it up, it won't fight you when pressing it into the tin/pan. Of course, you'll want to dry it off after you wet it so it doesn't drip.

    Thanks handsome! Just got a loose bottomed tin here in the US at a thrift store, brand new and wondered about it. You are very helpful, now do I need a specific cake batter to use? Nigella Lawson cautions on a runny batter, but if lined properly, should I have to worry?

    The only one’s I’m having trouble lining effectively are the donut/torus shaped ones.
    I usually go for 2 long rectangular strips. One for the outer wall and one for the inner, overlapping where they meet.
    However, the curved edge around the perimeter makes the outer rectangle cumbersome to come together nicely
    I’ve also tried making a large donut shape for the outer wall so it follows along the curve but I feel it’s wasteful

    This video made lining tens seemed so simple. I tried a different video where it was just text on the screen showing how to measure, blah, blah, blah. It was, like, seven steps to line a square pan!
    Your video here made paper lining look DEAD SIMPLE!! Now, I will have better technique next time I make raspberry jellies.

    With nothing to do because home with Covid I decided to clean my baking cabinet. With 3 spring for pans, 2 that leak, very expensive I might add, I decided to research what to do.
    WELL hey! Thank you for the tips on lining, I've lined all my pans but "idiotically" never did my spring form! Thanks!!!!

      I also had a spring pan that leaked. It turns out I had accidentally put the bottom part upside down. I realized it was upside down when looking at the other bottom for the same spring pan but meant for bundt cake. I always double check now when I use it!

      @@Al.Brady. i made just a simple butter icing sponge cake, but this time im glad too say i didnt have to do the normal routine of scraping the bits of sponge from the tins and trying to jigsaw the pieces back together, they came out flippin fantastic, i felt like a real propa mary berry lol...far from offensive it was a great informative video and certainly helped me.     Nice I like to see the off-cuts not being wasted. Maybe I'm a nutter but I'll happily fully line a tin with off-cuts I'll just grease the baking pan and stick & overlap pieces till it's covered. Am I the only weirdo that does this?

    Good one, Al! You will be glad to know that I am no longer a tin-lining idiot. I widely use the standard 8" x 2" round tins. While I already have a few packages of 8" circles, I construct my side strips from a solid sheet of paper. Since the circumference of an 8" tin is just over 25", I can run a sheet 26" long. The roll of paper is 15" across--I can cut 6 strips of 2.5" each with a straightedge and waste very little paper. Math messing' with ya, Al. But hey, thank you for the video--really good!

    @Al Brady - I have several spring form pans, but none of mine look like yours. The bottoms of mine are flat - you have to line them up and slip into the groove inside the ring/clip part. How would you line one of those kind with parchment paper? I’ve tried many times, but, like an idiot, can’t get it right. Help please 🥺

    Is there any other way to put a parchment paper in my cake molder? Because the cake molder i- bought is like yours, the one with a lock but the problem is it is broken, when i try to lock the molder it doesn’t lock properly, and when i place the cake batter it will definitely spill in the bottom. I hope you can help meeee😭 I DONT KNOW WHAT TO DO. Please reply☹️

      The only thing I can think of to do is line the tin with foil first, so that your batter doesn't spill. Then line with parchment, so you batter doesn't stick. Hope that helps! Good luck!!! 😅

      I've never had a problem with it leaking before but I guess it would depend on just how wet your cake batter is!

    There are plenty of genuine reasons to call someone an idiot. This, isn't one of them. Your title is needlessly rude and offense, so I didn't bother to watch the video, or subscribe to your channel. I found other videos that didn't find it necessary to make me feel bad about something so unimportant. Would it be so difficult to be nice?

      Well, it makes the cakes, etc, easier to remove. I have had luck in the past with some amount of prayer, but now I can save my prayers for weightier occasions.
