    CAMPASPERO, SPAIN - Today we’re in the small village of Campaspero, Spain, about an hour and half north of Madrid. It’s very small, but the reason people come all the way here is to eat at Restaurante Mannix, a restaurant that’s known to serve some of the best fire roasted lamb in Spain! Today we also have the special opportunity to visit the factory of Joselito - widely considered to be one of the best Spanish hams in the world.
    Restaurante Mannix (g.page/Restaur...) - First lunch, and we saw a bit of the cooking process where they use locally raised lambs. The lambs are cooked in an adobe mud oven with orange fire wood. The result is that the lamb is insanely tender - they literally use a spoon to cut it up - and the skin is so crispy and juicy. Some of the best roast lamb I’ve ever had in my life. Restaurante Mannix is family run, and they are so hospitable and friendly. Price - €50 per plate of lamb
    Joselito Jamon (www.joselito.c...) - Next up we drove to Salamanca, Spain with Jose from Joselito. Joselito is known throughout Spain and the world for producing some of the best Spanish jamon in a natural way with no additives or preservatives. It was amazing to see the factory and the process that goes into it. The pigs are Iberico and 100% acorn fed. The taste is something truly magical.

    Mark Wiens, I want to thank you sincerely, from my heart and stomach. A little bit of background, I’ve been fighting stage 4 cancer for a little over three years. I’ve lost a lot of weight and have struggled badly to keep nutritional foods down. Fighting cancer is hard but the other things you deal with is harder, such as the chemo and or treatments. Lots of side effects. You have changed my life with your videos, I love you , Ying and Micah. Please keep doing what you’re doing which is making people feel happy about food. I certainly have improved my appetite since tuning into you. God bless you and your family.

    Puedes seguir así toda la vida y en España siempre descubrirás un nuevo plato que te sorprenderá y nuevos sabores. El mejor país del mundo, sin duda.
    Una pena que pruebes el jamón joselito envasado...y no cortado a mano, muy diferente.

      Que podría decir, viví en España 30 años, en el Reino Unido 5 años y aquí en US 20 años. No hay mejor país en el mundo que otro. He visitado 30 países, algunos varias veces y tengo suficiente información para esa opinión. De hecho Mark fue a Barcelona hace 4-5 años y los restaurantes a los que fue no le dejaron impresionado como esta vez.

      Sin desmerecer en absoluto el jamón embasado, y mucho menos si es jamón de máxima calidad como son los jamones Joselito, pero ése jamón cortado en el momento de comerlo es otra dimensión.

      Yo suelo decir de los mejores por prudencia, pero cuánta razón tienes... Lo variada que es la geografía, clima y gastronomía en España con lo relativamente pequeña que es geográficamente... Incomparable.

      @@Chacarruna hombre... Claro que hay países mejores que otros! Es debatible el ranking, pero hay montón de factores en los que puedes medir los países contra otros. También conozco bien los 3 que mencionas y cada uno tiene su encanto, sus partes buenas y menos buenas. Yo personalmente me quedo con España aunque hay aspectos específicos en los que me gustan más UK o USA.

    If I've learned anything from these videos from Spain, it's that both lamb and suckling pig can be utterly transformed by the simplest of ingredients. Just salt basically. And, roasting in an oven with fire. This...and, that the rendered juices are an essential part of the eating experience.

      not a lamb leg as he states, it was a lamb fore quarter or shoulder including shank and neck, but i would be very happy to eat the slow cooked lamb, it looks amazing

      Lechazo is a lamb that has only had milk, weighing approximately 4 kilos. It is a different breed than the Australian lamb. The Australian sheep is Merina (very good wool) the Churra for meat is better.

    I have also have the most tender roasted lamb ever in Andalucia Spain at the restaurant La Sarten in Behnavis. It is quite touristic today but a few decades ago it was rather tourist free. The Spaniards are awesome in this field.

    Spectacular travel around Spain unveiling the real amazing quality food that the country provide. I miss a tour in the south region with the huge fish & fried excelent food variety that you can find there, maybe for next time.

    Wow!!! Just wonderful. Mannix an elegant white table cloth resteraunt Love the leg of lamb, sweet breads and livers. But you'll fit in cause of the family's hospitality. Love the little houses with balconies Really quaint and quiet.. Such a little town with the biggest heart. I saw Jeffrey and Keith today. That Joserito ham looked so good. An appetizer with bread, crackers, maybe soup with beans! Sounds like another good tour in Spain!!!

    I'm going to make roast lamb leg for my Mum this weekend. I made roast chicken last weekend. She's just had surgery so is off her feet for a while.

    Mark should explain that the main meal in Spain is eaten early afternoon, which is why the restaurant is only open during the day [else some might find it strange]

    I really like the idea of caul fats sticking on carcass during the dry aging period, reminds me a dish called sheftali kebab which belongs to Cypriot cuisine, simply pork patty rolled around caul fat and cooked over coals can do lamb version too, and kidneys.... yes finally some offals, my personal and strong idea is offals are more valuable than the meat itself because all of them a pack of flavor and characteristic textures, also requires huge cooking knowledge, kidney fats are very unique staff, it will be the best flavor for grill meats especially over coals kebab sort of cooking, loved it !

    Years ago, lamb was looked down upon as a lesser meat but I love a good roast lamb. This had me drooling Mark! If I ever hit Spain I would actually detour to visit this restaurant

    Surreal that after all the hype they give you vacuum sealed, machine cut ham! It's preferable to have a lesser ham fresh cut by knife than the best jamón vacuum sealed and machine cut... Always great to see how you enjoy Spanish food so thorough and honestly :-)

    I remember that Mark came to my country Turkey about five or six years ago and spent time in İstanbul for five days, if he ever travels to Turkey again i would prefer him to eat roasted lamb in Turkey also. Especially the head part is very famous in Turkey which we call "Kuzu Kelle"(although some people don't like it, like my mom hates it). I would also suggest him to eat "Sögüs" which is cold cutted raosted lamb head eaten cold as a plain plate or in a bread/tortilla bread as a sandwich trust me it is very delicious.
