How to cook delicious Italian OSSOBUCO .

- OSSOBUCO - delicious Italian-style stewed beef in a thick sauce, with white wine and vegetables. This magnificent roast beef will not leave anyone indifferent! The beef turns out simply divine, and literally melts in your mouth! Not every restaurant prepares such meat, but we will learn how to cook it at home. Ossobuco literally means "hollow bone". The main ingredient of ossobuco is veal shank, cut into thick pieces, 4 cm thick, together with the marrow bone. Beef (or veal) is languishing in the oven for a long 2-2-5 hours along with vegetables and white wine... a must try! Roast turns out just great!
1. For cooking, it is necessary to collect 400-600 g of veal or beef knuckle.
2. Tie each piece of beef with kitchen string and cook 1 tsp. a spoonful of salt, 1 tsp. a spoonful of ground black pepper and flour.
3. Heat a frying pan, add 3 tablespoons of olive oil and fry the meat on both sides until golden brown, 3 minutes on each side over high heat.
4. We shift the meat from the pan to a baking sheet.
5. Put 30 g of butter and finely chopped onion into a frying pan and fry over medium heat, stirring occasionally.
6. Add chopped carrots, garlic and fry for 3 minutes over medium heat, stirring occasionally.
7. Add dry white wine to the vegetables, simmer for 5 minutes over medium heat.
8. Add beef broth and chopped tomatoes, stir.
9. 2 bay leaves, allspice - 12 peas, nutmeg - ¼ tsp ground black pepper - 1.5 tsp, roasted salt
10. Put the meat on a baking sheet, pour over the prepared vegetable sauce, cover tightly with foil.
11. Bake in preheated 180°C (356 Fahrenheit) oven for 2 hours.
12. Serve spicy ossobuco with polenta, risotto, mashed potatoes or alone.

- beef knuckle (ossobuco) - 4 pounds / 2 kg
- Corn flour - 2 tablespoons.
- olive oil - 3 tbsp.
- butter - 1 oz / 30 g.
- onion - 14 oz / 400 g.
- carrots - 10 ounces / 300 g.
- garlic - 6 cloves
- dry white wine - 3/4 cup / 200 ml
- chopped tomatoes - 2 cups / 500 ml and simmer for 5 minutes.
- 2 bay leaves, allspice - 12 peas,
- nutmeg - ¼ tsp
- ground black pepper - 1.5 tsp, salt
- 1-2 sprigs of rosemary and 2-3 sprigs of thyme.
- beef broth - 3 cups / 800 ml, simmer for another 3 minutes. food
