Today we are bringing to you a holiday classic recipe that is also a favorite of mine and so many around the South, Sausage Balls. Typically, these are made with Bisquick baking mix but today I am bringing you a way to make an easy-to-make sausage balls recipe with flour. It is so simple and easy, you must try it!
I do believe that Bisquick may have been the one that came up with this recipe but honestly, I am not sure. In this recipe, I was able to come up with a way to make sausage balls made without Bisquick.
The Bisquick baking mix combines all of the ingredients needed to make biscuits. It is supposed to make it easy and quick for those that want to make biscuits and other items. It has the flour, leavening agents, and fat all mixed into the mix.
In order to keep the fat stable though, it has other ingredients as well, like hydrogenated stabilized oil.
With that being said, the sausage already has fat in it so why not just use regular self-rising flour and cut out all those nasty ingredients that we don’t need. So, we decided to make a sausage balls recipe without Bisquick!
It turns out that it works pretty well.
INGREDIENTS
1 lb Ground Sausage
1 lb Freshly Shredded Extra Sharp Cheese It works better if you grate the cheese yourself. The extra moisture from the cheese helps to bind the mix.
2 cups Self-Rising flour
Main Instructions
Preheat your oven to 350 degrees Fahrenheit.
Start with grating your cheese. Set that to the side for the moment
If you have a stand mixer, this works the best and takes the least effort but you can do this by hand as I demonstrate in my video above. For this recipe, we are going to show you the by-hand method but if you are using a stand mixer, just add in the flour, and then the sausage a little at a time. Then do the same with the cheese until it forms a smooth ball.
By Hand Method
In a large bowl, add the two cups of flour.
Gradually add in the sausage breaking and mixing it up as you go. You can see the video below for how I do this.
Add in the cheese a little at a time as well. Mixing with your hands as you go.
It does take a good bit of effort to get it all mixed up together. You want it to form a smooth well-mixed ball of dough. You should be able to pull a small amount apart and roll it up and it sticks together.
After you have your ball of dough formed. You will need a couple of baking sheets. Spray them or coat them with a lite coating of oil. You could also line them with parchment paper to keep the balls from sticking to the pan.
Pull a small amount from the ball of dough and roll it in your hands to form 1-inch balls. It should be roughly about the size of a walnut or golf ball. A cookie scoop also works great for this method.
Once you have them all rolled out, pop them in your preheated oven.
Bake at 350 degrees for about 20-25 minutes until they are golden brown.

I tried something different. I've been eating sausage balls for some 50 years, so i tried a few innovations. First, I used store-bought shredded cheddar. Because it was so dry, I added about 3/4 cup of milk. I used whole wheat flour plus a tablespoon of baking powder and a teaspoon of salt. I added a little (1/3rd cup?) fresh minced onion. I gave the mixture a generous dash of crushed red pepper and ground sage, because I like breakfast sausage a bit hot and sage flavored. I rolled the mixture out on fine ground cornmeal from a neighbor of my sister's farm and cut out 2" circles of the mixture. I plan to eat this in my lunch at work.
As a followup, they turned out well. They puffed a bit from the baking powder and took a little more time, but are tasty. Since I like hot, sage breakfast sausage, I might add a little more red pepper flakes and ground sage next time.

We use to use sr flour in ours and you can use crème cheese one block also in yours if u want it

We never buy self-rising flour, only regular. So, what do you think...2 cups of flour with 3 tsp of baking powder and 1 tsp baking soda? And no extra seasonings, huh?

I add seasonings: salt, pepper, onion powder.
That is good too. I don’t add salt since the sausage and cheese already has a good bit of salt. I like to add a little cayenne pepper sometimes too! It’s great to mix it up from time to time.
Can I use half the amount of cheese and it still work just as well you think?
Update! Used only 8oz sharp cheddar cheese block (shredded) and wow! They turned out great!🙌😁 SO simple, and JUST like mom makes! Except mom always uses bisquick 😆
That is awesome to know! So simple and do good! I do use bisquick sometimes but this recipe is for when you do t have bisquick on hand. Bisquick is basically self rising flour that has a an added fat in it( stabilized vegetable oil) in this case of the recipe I’m considering the fat from the sausage as my fat. It’s much cheaper to buy self riding flour vs bisquick plus most ppl have it in hand or you can make it by adding salt and backing soda to AP flour!
