National pipe taper. There's also NPS, national pipe straight, which is not self-sealing.

Generally, pipe fittings are supposed to be tightened 1-1/2 turns past hand (or finger) tight, give or take.

Are the BSP petcocks (for old british bikes) tapered threads as well? I've installed a few of those and it doesn't seem like they are.

BSP stands for British Standard Pipe. They can be either tapered or straight. If they're straight, they'll require a sealing washer and a jam nut.
