Lemon Madeleines | How to make perfect lemon madeleines

Pairing lemons with madeleine would probably be the best thing ever - soft & tasty madeleine with tangy lemons!
▶Lemon Madeleines◀
Quantity: 6ea
Whole Eggs 45g
Milk 6g
Lemon Zest 4g
Sugar 42g
Honey 6g
Cake Flour 62g
Baking Powder 2.9g
Salt a pinch
Melted Butter 56g
(Pre-heat 190℃) Bake at 180℃ for 9~10mins. No need to rest the batter in the fridge - if you have a deep madeleine pan like mine, your madeleine will come out with a fat belly.
▶Lemon Icing◀
Fresh Lemon Juice 6g
Powdered Sugar 30g~36g
Bake at 180℃ for 30sec~1min.
▶Lemon Pipette◀
Fresh Lemon Juice 40g
Water 10g
Sugar 40g
Mix & melt everything (use microwave if needed)

Hi! I’m Hanbit, professional pastry chef and CEO of Sugar Lane Baking Academy based in Seoul, Korea. Funny enough, my background had nothing to do with baking - far from it. Hi hanbit, thank you for the recipe. I've made it twice, one with gluten free flour, both turn out amazing. Mine also had a big hump even though i didn't use the same pan as yours. All in all, thank you for the recipe

I was taught (many years ago) that once filled with batter, the pan should go in the fridge before baking, so that thermal shock will help the madeleines rise - like pâte à choux. Any thoughts?

I was wondering, have you by chance heard of Louise Slice, Tan Slice and Cookie Bars ? These may not be so popular in Korea but these are neat treats that are wonderful to have with black coffee on the side. I was wondering whether these may be some of the next desserts you make : D. I'm non Korean and I'm just wondering if the name "Hanbit" have any particular meaning in Korean? Because I almost have never another Korean named Hanbit before
Yep it's a Korean name indeed :)
Tried doing them today but it did not turn out great. But it wasnt the recipes fault. I quadrupled the recipe and used a baking sheet (made treats for the office) and after 10 min it was not done so I put it in for 10 more minute and it came out a little dry
yeah that's too long - bake it for slightly over 10mins.
