FOR THE CHIPOTLE MAYO: Combine 3 tablespoons vegan mayo, 1-2 chipotle peppers in adobo and ½ lime (juiced) in a bowl. Got this from the website.

Same! My local grocery stores carry it - it is usually in the "vegan" section or with the regular cream cheese!
