      I'm from Detroit and lived here my whole life. Buddy's Pizza has become too commercial and the quality has gone downhill in my opinion. Don't get the wrong impression about Detroit style pizza because there are many pizza places in the Detroit area that make it right. I would never judge a style pizza from any state that was sent frozen. I enjoy your videos!

    I've spent a good many years in Detroit. I swear, Detroit style is one of those things that works great in concept, not so much in application. At least, not from most major locations. When it comes to Detroit deep dish, nothing I've had even comes close to home made in my experience. All that to say, this man puts in his homework, and his recipes are usually great. So I'm expecting this to be no different, and knock most pizza joint attempts to the curb. Looking forward to trying it.

    A few changes I have made:
    I take the 90g of sauce out of the fridge and let it sit out while the dough is also waiting for the 2-6 hours. The sauce comes to room temperature and I only add it on top of the pizza when there’s less than two minutes left during the cook. The weight and cold-ness of the sauce deflates the dough while in the oven slightly. It’s best to let the pizza cook with the turkey pepperoni and cheese on top for the most part.
    I also par bake the dough for only two minutes with the turkey pepperoni on top to let the taste of the turkey pepperoni flavor to seep into the dough during the par bake. Why two minutes? I reduce the cook times significantly by going with 550 degrees. The cheese cooks/browns a bit better than with 500 degrees.
    This recipe alone is worth the price of your cookbook! You da goat!!

    Hey man, keep up the work. I've tried your 320g protein tray pizza recipe and it has helped me a bunch for losing weight and gaining some muscle. It's easy, does 8 servings at a time and I don't have to sweat it out cooking so much and can have all the protein I need. Love to put a bunch of peppers, chicken, chilli's and jalapenos on the pizza for some added vitamins/nutrients etc. Thank you for all these recipes!

      no way i do the same i add a bunch of deli meats and jalapenos as well and because of the fdoe I parbaked my pizza day before yesterday for me and my twin brother It turned out absolutely amazing!!! making pizza is too easy for being one of the best foods out there, any type of pizza is amazing, deepdish, regular, alfredo, bbq, and pizza bowl all i need to try now is detroit

    Excellent recipe as always man. This pizza is probably my 3rd favorite style after NY and Chicago deep dish, and this recipe is pretty much indistinguishable from the real deal to my taste buds. Same could be said for the Lou's copycat one. Pizza is by far the best diet food.

    I've mace this 3x so far! it's absolutely added to the general rotation of pan pizzas and stuffed cheesy bread! I'm 6wks into the cut,11lbs down and I've had pizza almost 3x a week! GET THE COOKBOOK IF YOU HAVENT

    If you're lazy like me, you can also try baking the pan on top of a baking steel or pizza stone to get a crisper crust without putting back in. Baking on the flat surface will more evenly distribute the heat on the bottom of the pan!

    Quick question: How do you feel about the vital wheat gluten adding to the total protein content of the dough, considering that it has a PDCAAS of 0,25-0,30 and it makes up the bulk of the protein on the recipe, which means that in actual terms you aren't getting the total 50-60g of protein you get from it as compared to drinking 2 scoops of whey?

      I feel it is massively overblown. The bolus of the food matters so if there is amino acids that may be missing in one ingredient, another ingredient will make up for it in the same meal. This would improve the score. For example, we have turkey pepperoni and cheese that accounts for most of the protein in this recipe that has PDCAA scores of 100 and every amino acid, some in excess to make up for the lack in lysine in VWG. I purposely craft my recipes so that they are paired with food like cheese, meat, eggs, milk, etc that all score highly.
      This is how insulin works too. Yes pure sugar will spike insulin, but combining that sugar with fats and protein in the same meal completely changes digestion and the insulin curve.
      To top it off, all labels include protein from fruits, vegetables, and other protein sources that may be lower on the PDCAA scale and noone says anything about those, but it seems people like to raise concerns from vital wheat gluten. As long as VWG doesnt make up the majority of the protein you consume daily, there is no issue. That works out perfectly because this is just one meal a day, which has more than 60% of the protein coming from high PDCAA scores and all the amino acids in abundance. Renaissance periodization actually just did a great video on this topic and they said as long as you are getting at least 50% from high PDCAA scores, there is no issue. I agree with their recommendations.
      As a closing thought, I have plenty of viewers who don't eat meat or just have trouble getting protein in, in general. And if them using this recipe helps them meet their protein goals that they weren't meeting before, that is a win regardless. Then when you add in the context of, everything I have said above, it is a no brainer.

    Question if you could help me.
    So I got your cookbook some things in there like cheesy Gordita crunch has “per serving” but doesn’t explain what is a serving? So like is it one Gordita or two? Cause the picture has two. I’m sorry does that make sense? Or your Detroit pizza the whole thing is a serving or is it half? If you could update that it would help me out. Or even clarify.

      They make it and freeze instantaneously. Then it is shipper with dry ice and arrived frozen. Gotta disagree here. Will it be 10/10? No, but should still be minimum 8/10 if reheated in an oven for at the correct temp and duration.

    Can you do protein yogurt? Is it just about making homemade yogurt and dumping casein into it? I see a lot of recs for making greek yogurt and instead of straining adding milk powder. I'm wondering if adding unflavored casein or whey would make it into protein yogurt (like the Oikos brand)

    Awesome Nick, can we get more detail on the out recipes you said you might be able to get out soon this month like waffle, brownies, cereal. if you can that out if possible because only you can or yeast risen air fried donuts please. it doesn't not have to be yeast risen just good or at least review sm1 else recipes like the old days. PLZ maybe rahul kamat donuts or donut holes. or maybe remington;s recipes. i love making white chocolate macadmai nut muffins on my cheat days based of your recipes for muffins.

    From the Detroit area, Honestly if you get a square from a Jet's it will give you similar experience to a true "Detroit style" so you dont have to do get frozen. Only some of the OG pizza spots do sauce on top around here. A lot just do square like Jets which is originally a Michigan company. Definitely the best big chain pizza Michigan has produced Domino's, Little Ceasars and Hungry Howies are a shame to Michigan born pizza.

    This is great. I reduced the dough by 1/6 and the amount of cheese and sauce by about 25%. Still a 8.5/10 if the original is 10/10, but now it’s at 950 calories and I can fit that into my macros while cutting

    I'm curious: why not using a very strong white flour, like bread flour, instead of all-purpose flour? Bread flour has more protein, holds more water (so the dough can have less flour while still have more gluten matrix) and, sometimes, has less calories than AP flour. 🤔 Mind you, I never tried "Detroit pizza", so AP flour might indeed be the best choice, I don't know much about American pizzas. I'm just curious!

    I must ask, why do you use vital wheat gluten as a protein source? Isn't bread gluten not the most bio available type of protein with low absorption? Wouldn't you be able to get a similar results if you use a different supplemental protein? Maybe whey? Maybe something else. I understand that all week gluten is used in baking commonly, but as someone who's trying to hit fitness goals wouldn't it be better with a different protein source?

    I live your content but only thing I'd say is PLEASE AVOID USING SEED OILS. Use olive oil spray instead of PAM for coating the dough containers and use ghee instead of butter to coat the pan.
    I love your recipes so that's what I personally do when I follow your recipes at home and they turn out great!
