    Vegetable Croquettes
    A little imagination is all it takes to transform 4 sad vegetables into a lively and colorful lunch.
    Without using strange ingredients, just things that you commonly have at home.
    And we also make a nice sauce to accompany it.
    Ingredients for 12 croquettes
    3 medium potatoes
    1 medium courgette
    1 medium carrot
    3 tablespoons of frozen peas
    Salt, olive oil
    Parsley
    3 tablespoons of parmesan
    6 tablespoons of chickpea flour
    (or breadcrumbs and an egg)
    For breading
    Bread to taste
    1 egg
    2 tablespoons of flour
    Oil for frying to taste
    For the sauce
    1 tablespoon of mayonnaise
    1 tablespoon of mustard
    30 g of pickles
    1 tablespoon of olives
    2 tablespoons of oil
    Salt and parsley to taste
    In a medium saucepan, grate 3 medium potatoes with a coarse grater.
    Two turns of oil and cook, stirring often, for two minutes.
    Now add the grated carrot and courgette and the peas.
    Salt, optional pepper and cook, stirring often, for 4-5 minutes.
    Remove from the stove and let cool.
    Add parsley and cheese, mix well.
    There are two ways to thicken.
    The first involves adding about 6 tablespoons of chickpea flour one at a time as needed.
    The second involves adding an egg and then breadcrumbs one tablespoon at a time.
    Until you get a moldable consistency that is not too sticky.
    Prepare a batter with the egg and two tablespoons of flour, 2 tablespoons of water.
    Form small croquettes with your hands, or meatballs.
    Pass them through the batter and then through the breadcrumbs.
    If you cook them in the oven you can also avoid the batter and just pass them through the bread.
    Fry the croquettes in plenty of oil, 179°c, number 3 - 4 croquettes at a time so as not to cool the oil.
    Or you can cook them in the oven or in the fryer for 10-12 minutes at 200°c.
    The sauce must be a little strong because the croquettes are made with rather sweet ingredients.
    Then chop the oil and pickles, add 1-2 tablespoons of mayonnaise and a tablespoon of mustard, parsley and give it a simple mix to create a contrasting sauce for the croquettes.
