It's a little clunky, but at each location on the map there should be a skull or quest marker indicator. If it's greyed out you've done it, if it's lit up you haven't. You can also check where it says "quests" on the map and some will be listed there :)

I guess I must jave missed the 20% resists, because if I take off my gear I have 0.

If you're on cruel there is a resistance penalty depending on what act you're in, so resistance requirements do ramp up as well :)
