      Yeah I found him during the pandemic. He’s such a real chef with an invaluable knowledge of food and food culture. You’re not going to find many UA-cam cooks with such REAL knowledge and experience in the industry. I’ve never seen someone cook with so much love

    My condolences to the family of this man! So sad for the loss of Daddy jack. I have been a fan for years. Please keep all videos going. People can learn alot from a person most of us have never met!!! I know I have.

    I have been watching this guy for years, even had the chance to visit and enjoy the food. He is one of the few TV chefs that actually gives thanks to his staff and assistants. This would be the perfect guy to learn from when you are interested in real cooking as a profession.

    I was a big fan of jacks, and discovered his videos and loved how this man loved what he did so much. It showed in the manner of how he cooked, spoke to his customers and in every one of his mannerisms. He was a much, much loved figure by all of his fans. When i learned that he had passed, i had difficulty watching any of his video's, it was a tough time for many of us. Only recently have i returned to enjoy all of his many talents, and revisiting the many video's he left behind, theres a line in a song i know that sums it up for me. Suddenly, you were gone, from all the lives you left your mark upon. Bon voyage, daddy jack.

    I watch quite a bit of cooking videos and this guy’s are great in comparison. He gets to the cooking right away, and is very straight forward with the recipe while giving some helpful tips for your knife work. Plus all of his recipes are ones I would actually make at home. Bravo 👏. Keep them coming.

    Be nice to your butcher is good advice, most people these days look at the selection in the case and don't even know to ask for what they don't see. My Mom taught me to always ask and I can always find what I need. Love your style !

    This guy is my new favorite cooking channel. Don't get me wrong I like most of them but he's by far the least pretentious yet still have amazing food that could hack it in any kitchen

    Dang man, I have been watching one after another after another videos of yours and could watch them all day. YOU are THE BEST on UA-cam! I love it. I have learned so much from you Mr. Chaplin! You teach such great techniques that I had no way of learning before your videos. I can't wait to try a few of them. If I ever get up north I hope I can come by your Daddy Jacks and dine with you. I love how natural cooking is to you. You look so at home there and I would burn the heck out of everything cooking it over fire like that...lol I love how you just know how long its been cooking and how long it can go. That takes years and years. I hate the thought of eating "fancy food" from 5 star restaurants I cringe, but I would love to eat your food. This is the kind of everyday GREAT food that common people would love. Let me get back to watching your videos. THANK YOU for taking time out of your day to make all these videos for fans like me!     Discovered this channel now man what a gem RIP. love how down to earth is. Feel like a lot of people would be like they got the short ribs from some local butcher or somewhere secret but he’s just like “it’s from Stop and Shop”. Keeping it real!

    He definitely made cooking look easy and didn't need a book to throw down on some good eats . I wish he was still around , I would have made a trip to meet him . I hope they still have his restaurant going . God bless his family and all that knew him .

    Daddy Jack, I am addicted to these videos! I have watched many of them, and wrote down some notes to try for myself. I love the way he handles a knife. I love how he cuts up that onion. Fantastic videos, have to drive up there to New London and visit some day.

    Since I have watched your videos I have began to use short ribs. I made a stew using the start of your French dip onion soup. That does look awesome and I bet it tastes delicious

      Also like the Celery trick. Instead of one stalk at a time, chop the whole bunch and work your way down.

      If you slow the video down there's also a trick with cutting the onions. His first slices aren't all the way through the onion, while it's still a complete ball. And *then* he cuts it in half.

    You can keep your prime rib, ribeyes and sirloin. Short rib is the best. It has it all. Beautiful job on this. With a sweet little salad and a glass of that pinot you used in the cooking.
