I have been watching this guy for years, even had the chance to visit and enjoy the food. He is one of the few TV chefs that actually gives thanks to his staff and assistants. This would be the perfect guy to learn from when you are interested in real cooking as a profession.
I was a big fan of jacks, and discovered his videos and loved how this man loved what he did so much. It showed in the manner of how he cooked, spoke to his customers and in every one of his mannerisms. He was a much, much loved figure by all of his fans. When i learned that he had passed, i had difficulty watching any of his video's, it was a tough time for many of us. Only recently have i returned to enjoy all of his many talents, and revisiting the many video's he left behind, theres a line in a song i know that sums it up for me. Suddenly, you were gone, from all the lives you left your mark upon. Bon voyage, daddy jack.
I watch quite a bit of cooking videos and this guy’s are great in comparison. He gets to the cooking right away, and is very straight forward with the recipe while giving some helpful tips for your knife work. Plus all of his recipes are ones I would actually make at home. Bravo 👏. Keep them coming.

Be nice to your butcher is good advice, most people these days look at the selection in the case and don't even know to ask for what they don't see. My Mom taught me to always ask and I can always find what I need. Love your style !

Since I have watched your videos I have began to use short ribs. I made a stew using the start of your French dip onion soup. That does look awesome and I bet it tastes delicious
If you slow the video down there's also a trick with cutting the onions. His first slices aren't all the way through the onion, while it's still a complete ball. And *then* he cuts it in half.
You can keep your prime rib, ribeyes and sirloin. Short rib is the best. It has it all. Beautiful job on this. With a sweet little salad and a glass of that pinot you used in the cooking.
