Chef, to make your scrambled egg mixture an even texture and color, run them through a sieve. It will strain out any solids and shred any whites so a whisk will incorporate into a silky, even material.
I make my eggs sunny side up on a pita bread over low heat and a tiny bit of oil/fat, with salt, Korean chilly flakes, garlic powder, thyme, grated cheese, and sometimes, bacon bits. When I crack the eggs, I spread the yolks as much as possible, to have an even cook and to keep the egg yolks running. After the cook is done, I spread the egg yolk like a sauce, over the whites. Basically, like an egg pizza.
I'm sorry, I just had to: If we assume you live 100 years before you die, and that you eat 4 eggs *every* *day* from the moment you are born, and that we stack the eggs on the oval side (meaning the longer side) and that we have large eggs averaging 3" tall, then all the eggs you ate in your entire life would stack just under 7 miles high.

The way I do my fresh eggs, straight from the nest for easier peeling, is steaming for 17 minutes for hard boiled then straight to the ice water.
