1.2kg (2.6lb) - Desiree Potatoes, Thinly Sliced. (Starchy potatoes are best for this recipe, such as Desiree, russet, or Yukon gold)
1 - Brown (Yellow) Onion, Thinly Sliced
600ml (21 fl oz) - Heavy Cream
2 Tbsp (40ml) - Full Milk
4 - Garlic Cloves, Grated
1 tsp (10g) - Wholegrain Mustard (Seeded Mustard)
1 tsp (10g) - Dijon Mustard
1 tsp (10g) - Creamed Horseradish
1/2 tsp (0.2g) - Nutmeg, Grated
1 Cup (110g) - Grated Cheddar Cheese
Pecorino Romano, Grated
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
6 - Sprigs of Thyme, Leaves Picked + 1 Sprig for Cream Infusion
1/4 Cup (25g) - Panko Breadcrumbs
Salt and Pepper to Taste
Method -
1. In a saucepan, add the brown (yellow) onion, cream, full milk, garlic, wholegrain mustard, dijon mustard, creamed horseradish, nutmeg, salt, and pepper. Mix well and bring to a light simmer. Turn off the heat when the sides of the saucepan start to bubble. Allow to infuse for 10 minutes. Remove and discard the thyme sprig.
2. Heat oven to 180.c - 375.f. Lightly grease a large roasting dish roughly 28cmx20cm.
3. Slice the potatoes into thin strips and add them to a large bowl. Pour over the warm infused cream mix and mix to combine. Lay 1/3 of the potatoes and onion into the greased pan and grate over pecorino Romano cheese to taste, a pinch of thyme leaves, a pinch of flat leaf parsley, salt, and pepper. Repeat two more times and pour over the remaining infused cream mix. Wrap in aluminium foil and bake in the oven for 1 hour.
4. Remove the potato bake from the oven and discard the aluminium foil. Cover the top with the cheddar cheese and panko bread crumbs and place back into the oven for 30 minutes or until the cheese has melted and is golden. A skewer can be inserted, and it goes right through the potatoes. Allow to cool for 10 minutes for it to set.
5. Serve alongside your favourite proteins and veggies, use it as a table filler or side dish, and dig in.

I have spent almost 15 years studying a "healthy" lifestyle, exercising, cooking, and supplements. I love your videos, but I would love even more to see videos on how to make the 40% of vegetables on your plate (yes, that is what doctors recommend) taste better. I mean kale, broccoli, carrots, cauliflower, sweet potatoes, mustard, collard greens, beets, etc. No seed oils or margarine, only animal fat or butter for cooking, EVOO for dressing.

Okay I have a bit of a challenge for you! I would really like to see if you could work your magic to make a dish with TVP, also called textured vegetable protein. Its one of the highest plant based protein foods and there are virtually no recipes for it despite it being very versatile and tasty if made right!
Jack, I'm not overly fond of potato or pasta bakes, but this recipe I might just have a crack at in a smaller amount.
Actually your recipe probably would be great for pasta too and would pair wonderfully with YT channel 'Adam Garrett's' recently uploaded Sausage Casserole.
