As an Aussie from Bankstown who has a "do not sell this man anymore XXL snack packs" framed mug shot in my local kabab shop because of heart attack reasons, that looks like a damn fine HSP Nicole
The way Josh was eating the HSP was the most authentic part of the experience, because HSP’s are god tier drunk food and If you go out the the clubs there will always be the local kebab shop on the corner, and it will be packed with barely conscious club goers shovelling chips and sauce and meat into their faces 😂
Also uncannily similar to the secondary authentic HSP experience: working in late night retail when the local kebab shop is the only place still open after dark, sitting across the break room table from a barely post-pubescent teenage boy who is blindly shovelling chips into his mouth with one hand while scrolling TikTok with the other.
Pro tip after living in Brussels for a couple months a few years back: Rather than the mitraillete, which yes is very good, a lot of the doner kebab/souvlaki places in downtown Brussels (near the Delirium bar) make like gyro versions of the mitraillete and they're sooooo good!! Also get it topped with sauce samourai instead of andalouse (its basically just spicy andalouse, I think it's made with harissa instead so it is a spicy red pepper rather than sweet red pepper), but there are tons of options to go with. Also random side note, Zaxby's sauce tastes the most similar to andalouse of any "pink mayo" fast food sauces I've had here in the US. Just for any Americans wondering what andalouse tastes like or any Europeans wondering what Zaxby's sauce tastes like (Zaxby's is a popular southern US fried chicken restaurant, I think I remember it being brought up on a GMM episode where Rhett and Link were talking about the sauce in comparison to the ones actually shown in the episode, maybe like a "What Fast Food Has the Best Chicken Sauce?" sort of episode)
Im intrigued why a spicy version of andalouse (mayo-ketchup) would specifically be called samurai? Spicy warrior spirit? Japanese inspiration? Marketing campaign? Famous brand mascot?
I had a HSP for dinner tonight. Definitely agree with other commenters... needs chicken salt and at least double the meat. I also get mine with onions and extra cheese. Styrofoam is the right container for all my local kebab shops. Also who shares a HSP? Single container = single serve
And may I add, It usually has a layer of cheese on top of the fresh chips and then the meat on top of that so the cheese can get warmed and melty from top and bottom.

As a Belgian citizen I am happy to see your twist on the mitraillette! And as it should it was way over packed with fries. You can really see that you went to Belgium and tasted it yourself! The fricandelle was also awesome, the only difference is that fricandelle is usually mad with guts and meat waste, it's kind of our twist on a chicken nugget (composition wise). It was perfect!
In Canada we just call the HSP a Shawarma Poutine, that usually comes with Toum, (the oil based garlic sauce you see in every shawarma place) cheese curds (that squeak!!) and gravy, chicken or Donair beef (or both) and whatever shawarma toppings you want. I go for pickles, onions, and pickeled turnips
We call HSP an AB Pack in Adelaide and it's sweet chilli, bbq and garlic sauce. Comes in either chicken, lamb, or both. And you cry for it to both finish, and never end, as you eat the whole thing by yourself.
I take my mitrailette with a 'mexicano' which is basically a spicy boneless pork rib like in a McRib, and I use 'samurai-sauce' which is a blend of mayo and sambal, so also spicy.
As a person from Belgium specifically Gent. A great dish with fries from our city is een julientje. Like this so Josh can make a Canadian shwarma poutine. Fries ,gravy, cheese curds, shwarma meat topped with the same garlic sauce but instead of BBQ sauce it's Siracha
Add lettuce, tomatoes and cucumber to Nicole's dish and you have what we in The Netherlands call 'kapsalon', because it was first ordered by a barber in Rotterdam. (Kapsalon means hair studio) He wanted shoarma, fries with cheese and a salad, but had to eat while working so asked if they could put it all in one container, and from there it spread across the country and now you can order it in any kebabshop.
