As much credit as Kate’s getting, people are still over looking how hard it is to maintain the Castilian accent, whilst Sofia’s thick accent is also there as well. She could’ve easily slipped into a Columbian accent without knowing

Kate McKinnon is a comedic legend as far as I am concerned.....her range is just incredible. The way she kept that castilian accent going when having to pronounce all those heavy chemical words was just priceless....could watch her all day. SNL is so much poorer for not having her there any more...I miss her talent so much!!!

That's incorrect, Kate did a different skit for audition(ua-cam.com/video/mrYz1fZv2mw/v-deo.html) but you are correct at the last part, Bill Hader laughed so hard that he was asked to leave.
It isn’t incorrect, there’s a special SNL auditions video in which we actually see a little of Kate doing this Penelope Cruz bit for her audition, but obviously Hader found another bit of the audition funnier and commented on that.

I had to come watch Kate McKinnon's first SNL Sketch to see where it all started, as I learned she's leaving SNL after this current season. she's one of the best SNL cast members of all time and can't wait to see her hosting SNL or coming back as a guest in the future and I am also excited about other projects she will be a part of. Kate does something not many actors can do: SHE NAILED THE ACCENT!!! In this sketch she’s speaking with a Castilian accent (just like Penélope, but somewhat different from Sofía’s). Not many actors can understand these language subtleties. ¡Bravo, Kate: eres magnífica! 🙌 👍🤩

She was on point for sure as Mexican I could appreciate her Spanish accent.
Castellano is the language that originated in Spain and spread to most Latin America continent because of the firts spanish people from CASTILLA. This language does not sound like the typical spanish from Madrid. Lucky for us the people in Latinamerica our languge has also words from our native people, french, italian and english wich it makes the languages rich and beautiful.
