The adobo looks great. I don't have sherry vinegar, but I'll use red wine vinegar and throw in a shot of sherry. I'm going to start soaking a pound of dry cod right now! (in water of course, until I get the salt out)

I have created more of your recipies than anyone else I have watched. Fortunately,I have been cooking most of my life and I am very good at both the art and the science of cooking...so before I even start, I know what your recipes need to make them perfect....soooooo, thank you!!!! They are great inspiration. Basic recipes that I can build from are my favorites.
Hi just a few addin's to spice it up... For the Adobo...use a little more garlic, fresh oregano leaves, Lemon Juice -1/2 Cup, Onion Juice( red variety) 2,Table spoons, Spices as mentioned & grate in some nutmeg and blend them into a fine paste , then add in the water to adjust the consistency Marinade your fish of choice , 2-3 hrs, the lemon juice will immediately start cooking the fish through allowing the spices to be soaked up. Then with plain flour, add a little jest ( rice flour,) some panko crumbs, salt , pepper, , cost the fish without pat drying them post draining the excess liquid, coat well, fry them to your liking and enjoy with whatever you chose to drink .,... Cheers !!!

Too te adobo marinade I always add 1 to 11/2 teaspoons of good Indian curry powder. It doesn't make the fish Madras Indian but adds just enough flavor for you to say 'What the hell was that'!
I gasped when you spilled out that beautiful adobo marinade into the sink. Surely you could come up with another use for it, even though it was used to marinade fish. Perhaps to thicken it and reduce it to a sauce for the cod or another fish dish.
I havent tried to make it but i dont think that white fish meat could marinate deep inside, only the outside would you taste the marinate and would just taste the same as unmarinated one deep inside. I need some confermation to prove my theory wrong.

If you want to re-use the marinade, you will have to bring it to a boil to kill any harmful bacteria :) Much love!
