After you boil and clean the bone, how do you store the stock and the ham until you need it? I'd like to freeze some of it but I wasn't sure if it would be good.
Boiled ham water is not a flavorful stock. Use some aromatics and a splash of vinegar to extract the bone marrow to make a true ham bone stock. put it in a slow cooker on low overnight and you will have a rich flavor packed stock to use as needed.

I freeze the broth. Put it in Ziplocks if you don’t have a vacuum sealer.
I cook my ham bone in a pot of beans. Typically in a crockpot. Then make broth with the actual bone and fat. Drain it and add beans again. No waste.
