    I'm very lucky seed oils never entered our house when we were kids, my father was from the south of Italy and mom from the North, they only used extra virgin olive oil and butter and me and my brother continued the tradition.

      My dad used to say "unless it's from olives it's not oil" 😁😂
      And they were not keen on packaged foods, we probably got a small one portion container of Nutella once a month each 🤫 never seen a full jar 😉Other times different food culture.

      You are very lucky! I was raised on Crisco and margarine 😭. I didn’t know better in adulthood, so I continued with that. My husband and I have since switched to butter and olive EVOO.

    Why use specifically "sugar" when processed carbohydrates are the same thing within about an hour after eating? Sugar intake may have dropped but carbs have not.

    If I'm not mistaken, rapeseed oil is canola. They rebranded because otherwise they couldn't sell it. CANadian Oil Light Acid.

    We must delineate between what causes metabolic dysfunction and what perpetuates metabolic dysfunction. Carb consumption resulting in hyperinsulinemia will certainly perpetuate metabolic dysfunction.

      @@DrGreenbaumberg It will also cause metabolic dysfunction. I believe the theory of over nutrition covers all the bases and makes the most sense.

    It’s so obvious to me - in this world where lifestyle and nutrition have come under the greatest scrutiny, the reduction of polyunsaturated fats, specifically omega 6 linoleic acid should be the centerpiece of our efforts to recover and reverse the damages incurred over the last century +.

    Point that was omitted is why people can lose weight so rapidly after eliminating carbs yet it takes many months to years for seed oils to leave the body.

      Unfortunately the half life of the seed oils in our fat is nearly 2 years, he talks about this in other interviews. He also says that some theorize that all fat renews within 2 years in the human body, which means all seed oils would be out by then... while he thinks this is possible, he isn't sure

    The Italians walk after eating, easier to accomplish the 10,000 steps per day. Olive oil is abundant, portions are smaller, focus is on quality not quantity. Would be an interesting chart to compare with North America.

      @@claudiochisani4120 not everyone walks in Italy after dinner and lunch.
      Extra virgin olive oil we mostly use. Olive oil is crap, sadly. We don't eat portions like that in the UK.
      Anyway I'm Carnivore since many months. It makes a lot of difference!

    When he mentions that sugar consumption has gone down (46:00 mark), would that be because the food manufacturers have about 50 names for sugars/sweeteners and they are using those instead of actual sugar or HFCS?

    There is an additional obvious correlation to the lifestyle in North America - after the automobile became mainstream, tv channels, remote controls, iPads for kids - all invaded our life and made for a chronically sedentary lifestyle, lack of movement. In that context, both sugar and seed oils are twice as dangerous, as the body is not able to cope with the caloric surplus generated by both.

    Carbs including sugar is probably just as bad as seed oils. The times when I went back to eating cakes, muffins (that have no seed oils in them) my body started to mess up and I regained my belly fat. I don’t believe that seed oil is the only offender. Also doctor failed to look at other artificial chemicals that they also add in our food, besides sugar and seed oils.

    A deficiency in C15 found in dairy fat and to a lesser extent in animal fat has recently been shown to be the likely root cause of type 2 diabetes. These fats were replaced by vegetable oils during the low fat diiet craze. It could be this deficiency and not necessarily addition of seed oils responsible for obesity and diabetes

    I agree with all except sugars correlation to diabetes and obesity. Once people were eating sugar and doing so throughout the day, they were already constantly spiking insulin and creating metabolic issues. At that point the the biggest damage from sugar is being done (and May plateau) so it probably doesn’t matter nearly as much if those insulin spikes are are higher. Your cells are already locked all the time.

    Sugar consumption may have slowed...but what about carbohydrates generally. Did pizzas take over from ice cream?
    Did artifice sweeteners take over from sugar..even though they can drive up insulin as much?

    I'm already bought into the fact that both sugar and seed oils are bad for us and I am open to the fact that seed oils are far worse; I don't want to relitigate that here as I have eliminated both for several years. But Ben, I find it disappointing that Mr Knobbe didn't differentiate between the various forms of sugar (granulated, fructose, sucrose, lactose, etc). Maybe "sugar" (in total) hasn't changed much since the 20s but I have to think that variants (like high fructose corn syrup) probably is up 100s if not 1000s of percent in the same time frame. Chris Knobbe repeatedly quoted correlation data between % increase in sugar/seed oils and the corresponding increase in diabetes. Instead of giving me the fifth timeframe comparison pounding home the same point, I wish he did the same thing for glucose, fructose, etc....any chance we can get such statistics post-facto?

    Trader Joe’s uses seed oils like Canola, sunflower oil in everything… I won’t buy processed foods from TJs.

    Americans alot lazier than 100 years ago. Food more easily available. People are simply sedentary now.

      Many North Americans work extremely physically hard. Yet we're all getting fatter on average.
