Cendol: For Naab Vaam

    Happy New Year 2019! Wishing you all a great year ahead of you. To start out this year, let me share with you all our cendol recipe. After many trial and errors, my mom and I came up with this easy recipe. It has the right consistency and texture we like. The end results are beautiful since the cendol comes out to have very beautiful tails! It works every time we make it. So give it a try and see if it's to your liking!
    Cendols are a worm like looking starch strands that is commonly used in Southeast Asian dessert paired with a sweetened coconut milk. In this case, we will be making it for our naab vaam dessert.
    WHERE TO BUY CENDOL PRESS
    *** You can buy a cendol press online (Amazon and other places). I got mine at my local Thai grocery store. You can also use a potato press or anything with holes (steamer) etc.
    NOTE: I won't reply to comments asking where to buy a cendol press. All the info is here.
    PANDAN LEAVES
    If you don't have any pandan leaves, you can just add a little more of the extract/flavoring to your liking. Pandan leaves can also be found in the freezer section if you can't find fresh ones.

    I made it yesterday and my cendol turns out to be mushy, i used the rice flour you used in version 2 recipe because i couldnt find the flour provided in this recipe. Also i didnt add any pandan extract. Does the texture comes out wrong because of rice flour?

    I tried your recipe and everything came out right but when I grabbed the cendol with my hand, they were smooshing and didn’t keep their form. They tasted kinda bitter too. Did I do something wrong? Should I cooked it a little longer?

      Did you eat it right when it came out of the press? Make sure to keep it in ice water so it stays firm. It will taste better after letting it sit in ice water after an hour or two. The cooking process is a little tricky so it could cause a problem with the texture. I'm not sure where the bitterness came from, it could have been too much pandan mixed in with the flour.

    Cendols came out so smooth and easily. Sat in ice water for 2 hours before being served. However, after I drained and mixed it, it all broke apart. Found it to be very mushy. What can I do to keep it from breaking?

    If I make this big batch, how do I keep it fresh for the week?

      You can store it in cold water overnight. I wouldn't keep it more than 2 days though. Hope that helps.

    For the rice flour cake flour is that the same as “rice flour”

      No the packet I used in this video contains cornstarch in with some rice flour. I'm not sure what the ratio is in the packet mixed I used but it is not all just rice flour. Hope that makes sense. :)

      @@guntur1982 This is the best I could do to convert the measurements to grams and liters. Hopefully it works.
      340 grams steamed pork rice flour cake packet
      24 grams tapioca starch
      24 grams pandan leafs (4-6 whole leafs)
      2.36 liters water
      26 grams pandas extract or flavoring
      2.5 grams salt

      I like using the Sing Kung Corp brand since the cendol comes out to the texture I like. Their ratio of rice flour to cornstarch is different from other brands.
