Crispy Baked Eggplant Parmesan

  • One of my favorite eggplant recipes, crispy baked eggplant parmesan. 🍆
    Ingredients (4 servings):
    2 medium sized eggplants
    2 eggs
    Garlic powder - 1/2 tsp (3g)
    Dried oregano - 1 tsp (6g)
    Parsley - 2 tbps (30g)
    Breadcrumbs - 1 cup (120g)
    Mozzarella, shredded - 1 1/2 cups (330g)
    Parmesan cheese, grated - 1/2 cup (50 g)
    For the marinara sauce:
    Canned diced tomatoes - 14 oz (400g)
    1/2 Onion, diced
    Fresh basil
    Olive oil - 2 tbsp (30ml)
    Salt - 1 tsp (6g)
    Black pepper - 1/2 tsp (3g)
