We need to preserve our food culture as Afrikans. Mexicans still pound their ingredients. In fact, this is how Ghana shito was originally made before we started adding tomato paste and all those 'abrostire' crap...Pounding the ingredients also preserves their nutrients...A lot of shrimp was also added for the boarding school recipe without tomato paste during our time and it tasted good ...That's how my Mama made it for us, with a lot of Anloga sabala (shallots)...Thanks for sharing.
