  • This vegan Banh Mi sandwich is one of my favorite sandwiches! Marinated Tofu has a firm yet chewy texture, which has a satisfying umami flavor. The sandwich pops topped with pickled vegetables, jalapenos, cilantro and creamy Banh Mi sauce. That is, it. That is all.
    I really hope you’ll try this recipe. It’s Delicious!
    Marinated Tofu
    • 8 ounces extra firm tofu, *drained and pressed
    • ¼ cup soy sauce
    • ¼ cup rice vinegar
    • ¼ cup maple syrup
    • 2 tablespoon sesame oil
    • 2 teaspoon ginger powder
    • 1 tbsp cooking oil
    Creamy Bánh Mî Sauce
    • ¼ cup vegan mayonnaise
    • 2 teaspoon hoisin sauce
    • 1 tsp soy sauce
    • 1 teaspoon maple syrup
    • 1 teaspoon Sriracha
    Pickled Vegetables
    • 1 cup shredded carrots
    • 1 cup shredded radishes
    • 1 jalapeño, seeded and cut into thin rings
    • ¼ cup rice vinegar
    • 1 teaspoon granulated sugar
    • ¼ teaspoon salt
    Finishes
    • baguette roll(s)
    • a few fresh sprigs of cilantro

    TIPS:
     Serve shortly after assembling or the bread will become soggy.
     Store ingredients separately. Store the pickled vegetables and Banh mi sauce refrigerated, each in airtight containers, for up to 7 days. Store the tofu refrigerated up to 5 days.
    * To press tofu without a press, you need to:
    1. Drain the tofu from the package and wrap it in paper towels.
    2. Place the wrapped tofu on a plate or a cutting board.
    3. Place a heavy object on top of the tofu, such as a cast iron pan with some cans inside, or another cutting board with a flat-bottomed container.
    4. Press the tofu for about 30 minutes, or until the liquid is mostly squeezed out.
    5. Remove the weight and unwrap the tofu. Slice it as desired.
