    That’s why as a Chinese since very young age we were told not to cook spinach and tofu together. Because the oxalic acid in spinach and the high calcium content in tofu can form calcium oxalate and eating it will cause diarrhea. Also we were told to boil spinach and drain the water and then stir fry it or just simply season it. After I came to US I was surprised that people eating spinach raw in salad and that is one thing I don’t like to be in my salad.

      Yes if boiled its fine as 99% are removed. Most people can process oxalates however those who cannot will have problems regardless. I read that meat can cause kidney stones too - in high consumption but nobody is talking about this. Im Omnivorous and focus on meat and very low oxalate fruits and vegetables. I look at the bioavailability of foods and take the best of all worlds for a diverse microbiome much like the Hadza Hunter Gatherer tribe in Africa who are very strong and healthily adaptive. They eat meat, berries and tubers plus more: they are not 100% pure dogmatic carnivores. Dogma is a ride to no-where. I recently gave up coffee and feel amazing 2 month later. Many ailments went away such as mild ibs and stomach issues.

      @@gregprouse1173 I have been drinking coffee daily for a while now. I used to stop for a long time and then picked it back up. Maybe should try stopping again and see if it can improve my stomach condition. Just sleep more regularly lol

      U.S doctors tells people to not discard the soaking beans's water, so ive been cooking beans right from the bags without even soaking it, and now im dealing with the worst neuropathy of my life, my legs, feet and hands nerves were all damaged and took me 2 weeks only for it to stop hurting, crazy stuff, people are getting completely out of touch with traditional food preparation

      @@felipe8511 Yeah and this new carnivore diet people and doctors are saying hey are bad. Well yeah if you dont ferment or soak them as people have been doing for years. Of course you dont want to est them raw then yes they are toxic however if prepared correctly are perfectly fine. These carnivores are trying to confuse us about food by reinventing the wheel which dosnt need to be done. Diets are crazy these days

    I remember when having been keto for a year or so and eating almond bread. When eating it, it felt like a litteral knife stab in the gutt, good thing we have people like Elliot who can show and explain why it's a really bad idea to eat oxolate rich foods.

      Because we are brainwashed into believing that kale, spinach, chard, beets and watercress are superfoods if people knew about oxalates they wouldn't be eating them. They've been lying to us and actively trying to poison us.

      @@29sentz Inflammation doesn't clear the uric acid the kidneys clear out excess, but if their function is impaired by constant chronic systemic inflammation you get issues. Same applies to liver and all other organs.

    My MTHFR & DVR gene mutations caused my body to endue CFS since mid 80’s fibromyalgia early 90’s. When I finally realize the correlation between some foods and my pain and ability to walk, I was able to figure it out after decades of pain and suffering were oxalates. I’m 90% better. I can walk without a cane & almost without a limp I’m so happy and it’s only been six weeks! But I noticed a difference for the better in the first week.

      Well yeah started having ox dumping has been going on for six weeks thankfully re-watching a few videos I started taking magnesium citrate and oh my gosh what a relief it really helps even more than tramadol and Mobic together. It’s not something you want to take every day but when you’re in a dumping situation it sure did help me

      @@jimmyfortenberry945 Good question. I've been sticking to what my parents and grandparents ate. Lima bean soup and other soups all made from homemade bone broth (stock), sardines, butter milk, ham hocks, homemade breads, (sometimes banana bread or pound cake) unfancy meats (boiled chicken) and things like that (basically poverty food). Definitely NOTHING that is prepared (ex, frozen dinners, pasta in a can, soup, fast food, etc) My grandparents were born in the 1870s and 1880s, my parents were born in 1915 (just to put things in perspective). Check out Frank Tufano if you haven't seen his videos yet. Good luck, eat well, and live a long happy life.

      @@MsAnchovey I have seen the meat, My way is now carnivore. I tried my best to stay healthy by following the diet of my parents and grandparents, it came to the forefront that they mostly ate meat (My mother's mother was born in 1880). The food supply sucks, there is no other way than carnivore

      @@thomasgronek6469 My grandfather and uncle always ate of plenty lard, eggs, milk and beans. Grandfather was nearly100 years my uncle is still alive 99 years. My father ate the modern diet only 63.

      same difference (although with vastly more moral complications/conundrums) as the hordes of cases of parasitism caused by meat consumption...sushi eaters are playing just as much a russian roulette with their health due to similar levels of ignorance...except they are adding the aspect they are eating blood/feces & dead flesh with theirs...so there is that to remember. Yes people love to state that because they cook all their stuff they are safer? Oh really? Especially with unhealthy microwaves spotty abilities in this area (literally) you are still engaging in the number one vector for parasites in all history...people putting them into their mouths.

    Went on Keto diet and started using too much almond flour, sure noticed the joint pain from it! Cutting out on oxalate + started supplementing with Potassium citrate and Magnesium citrate helped me recover quickly.

    Ox-list: I suggest to change some plants that are not high and you put them in your list, like ZUCCHINI. Change it for KIWI, high and not seen as a berry by most people. Also though you are right with potatoes and leeks, they are not that high! Potatoes are eaten by many lowox people, by boiling in pieces and throwing out the water. I suggest to add QUINOA to the list, as high as BUCKWHEAT!
    Also, in berries, blueberries are not high.
    And in "nuts", seeds like sunflower and pumkin are fine, linen too, and all oils actually. Chia is very high though...

    When I heard about oxaltes and Oxalic acid i was done.. its used in industrial cleaning and aggressive commercial carwash chemicals. In place of very dangerous hydrofluorosilic acid and aluminum bifluoride..
    Acetic acid and citric acid are also used, though not as agressive.

    I came over from Bart's channel to see what you were talking about, yep excellent subject and just my jam, thanks. Perhaps you can talk about "the lab blood markers" of inflammation like CRP, homocyctine, other blood marker's your viewpoint to chronic inflammation up to these brain "proteins" or wild chemical neuro-issues that could be associated wiht brain fog or ASD or other neuro diseases. Brain fog is said alot with the ex vegan's and I have continued chemical sensitivity, brain fog and joint pains.

    Citrates may be helpful for breaking down oxalates, but they cause other issues such as inhibiting copper function, which is important. Morley Robbins has done much research on the subject and has the Magnesium Advocacy Group on facebook where people can search for answers or ask questions. Without proper copper function, iron cannot function (free iron causes oxidative damage in the body, and anemia can result from dysfunction), histamines can get out of control, etc.
    edit - still great info, just wanted to share for anyone who doesn't know about citrates. Maybe use them temporarily if suffering oxalate toxicity, but afterward stop using citrates so copper can function.

      Yes I agree use it when you’re in pain from ox dumping! Before I knew I was dumping I was taking tramadol and Mobic both every 4 to 6 hours and it wasn’t touching the pain! Then I found a talk from Sally Norton and Elliot and guess what taking magnesium citrate literally stop the pain 80% in 48 hours something those big Pharma drugs could not do! So unless you’re in a dumping situation and having the pain that I had you really have no idea

      Magnesium citrate is good but can cause a laxative effect. Calcium citrate will work also. Potassium citrate works but you can only buy it in tablet form at 99mg and the RDA is something like 3500-4000mg/day but you can get in bulk powder form.

      Without proper copper function? As in adsorption? Or an inhibitor somewhere along the line that inteferes with the function of copper?
      I'm wondering if elevated copper levels can actually mean copper deficiency. Like B12 and Iron. And if this is what you are referring to. Copper in most supplements is not the correct kind, I did learn that recently. But you have to watch zinc in relationship to copper, very strict ratio.
      My daughter tested high for copper, and then next tested zinc and it was super duper low. Your comment made me curious about whether the copper issue you mentioned was from lack of copper in diet or malabsorbtion or if you had any more insights

    I was making huge salads of spinach/kale/chard and snacking on almonds and dark chocolate when I started keto. Weird symptoms all over my body appeared. I'm doing an animal based diet now but I'm still feeling affects of possible oxalate build up and "dumping".
    I even developed that "keto rash" which Sally Norton posits is the body detoxing oxalates.

    You got me on b1 , I work for a well known
    Health food store in the states , they push all these oxilets foods . And I got into almonds . And nutts in general paying for it .
    Glad I listen to what was working for me . I started to take low doses of calcium citrate .
    Also had a high iron so stopped eating spinach and kale and Swiss char .
    Use to eat ice Berg lettuce and Romain .
    Going back to that the gutt health fascinating .really good .thank you .

    I came up with that gallbladder stones are formed because there isn't enough bile to prevent them from forming. And low bile can cause indigested fat in the stomach which binds with the calcium. Increasing the chance of oxalic acid absorbtion thus forming kidney stones aswell. So this could be a link between both stones. Idk i'm not a medical student i just built interest to nutrition recently

      Good logical reasoning. The very same process that leads to gallstone formation also enables the formation of kidney stones. Low bile flow can contribute to osteoporosis as well.
      We want some calcium bound to oxalates in the digestive tract to keep them from being absorbed, but we also want some calcium to be absorbed unbound. Osteoporosis is, of course, about more than a simple lack of calcium, but that condition is going to be made worse if your intake is curtailed too much.

    Wow!! Found you thanks to Bart Kay! Where have you been all these years! You are the rainman of antinutrients! Incredible! I can’t eat high oxalate, it’s an evil poison to my body. But how can you tell if you have the freaky genetic flaw or it’s just dietary overdose? High Oxalates flare my autoimmune diseases for sure, and I’ve had kidney stones. I use high dose magnesium citrate powder, very helpful. I’m so autoimmune and allergic, it’s suspected I’m even Alpha-Gal too as I’ve reacted to beef badly, so not as simple for me to just go carnivore. So many reactions, I should be a futuristic Star Trek type diet, of just light infused particles and IVs lol! 🤷🏼‍♀️ And nope, the most fancy probiotics or leaky gut protocols make zero difference, I still end up having to reach for the methotrexate 😩

      I would like to know this also because I love my Celtic sea salt and it does seem when I overdo my salt I do have more body pain it’s like my blood is poisoned. But I need myself to keep my vertigo away I don’t know what else to do

    Thank you so much, Dr. Elliott, for this video. I have been researching this very same subject for about a year to see if I figure out my muscle pain and constant skin itch.
    I'm struggling right now with high levels of histamine as well, at least it's my own diagnosis and confirmed by a doctor here. I get chronic urticaria and I take massive amounts of medications to control the itch. I take Bilastine (Blexten) and Ranitadine (Zantac). I used to be on Ceterizine (Reactine) but to that last one I have developed a bad reaction to it after using it for 5 years. Would you, Doctor Elliot, be able to dismystify this problem for me? Life is really not worth living with this constant itch. Thank you for anything you may be able to do. God bless you.

    So drinking natural mountain water usually high in magnesium and particularly calcium would naturally protect against this problem.
    I started drinking natural mineral Waters such as magnesia and gemerka, both of them are from central Europe. They help me a lot with my post viral CFS

    Is oxalate concentrated in one part of the food? For example, is it in the peel or husk rather than the core? Can high oxalate food sources be prepared in ways that dispose of the oxalate?

    This is why I soak all my seeds and make grains into a porridge through bathing at least overnight, rinsing twice over and subsequently freezing.
    Also why I purchase chanca piedra on an annual basis and use ACV. Hopefully my home made sauerkraut will keep me topped up in those specific areas too.
    Bit of a b__lache I must admit, but not everything should be consumed immediately straight out of a packet or be served post adding boiling water.
    That's but one of the reasons we're collectively in such bad shape as a nation. May we see the light...together.

      @@honeybeeblossom5846 Frozen water expands and takes up more volume. This breaks down the internal structure of the seeds, porridge or even our water pipes - like when we get a cold snap.

    Question: Why would I crave the taste of oxalates? I am really in tune with my body and I can feel that I need a nominal amount of them. I certainly don't go overboard but unlike everyone else I know, my body specifically asks me for cocoa nibs, chard, beets, dandelion, and chicory root tea. Could it be my gut bacteria? Or do I not produce enough? No, I do not eat a diet high in oxalates but the fact that I love the taste of them has always puzzled me. Also, I am very healthy with no joint pain or inflammation. And lastly, can you cite the studies that give evidence of the examples of the damage that oxalates do in the body? There are so many studies of isolated phyto-compounds that are not even relevant because the way these compounds are used in the human body is much more complex than what can be demonstrated in a study using just the isolated compound. Also, most people make their green smoothies with fruit that contains citric acid. I don't drink them but my point is that they may not be that bad for people.

    the US Department of Agriculture (in 2008) again confirmed that kale had 2mg of oxalate in every 100g. Kale is not considered to be high in oxalate...I'm planning my garden around low oxalate veggies...

    Question: If spinach contains high amount of Oxylates as well as a certain amount of Calcium doesn’t it cancel one another therefore spinach would not be as harmful as it looks?

      Yes Spinach is absolutely great for you. I eat 4 cups a day plus broccoli.
      Collard greens are great too!

      He says the spinach contains oxylate & calcium so you don't get the benefit of the calcium and get the negative effects of oxylate. Cooked spinach, and throwing out the cook water, then stir frying is best preparation method for lesd oxylates.

    Plants are stressors. A little can hep you in someways just like exercise stresses you and you recover to a stronger person. Most of our nutrition should come from animals. eating a little fruit and veg in season can help make us stronger

      Eating calcium containing foods alongside the oxalate/or before. Egg shell calcium will do the trick. Also, maintaining a healthy gut barrier and fat digestion is going to be key.

      @Hrvoje Batrnek I don't see how plants are more 'basic' than animals, perhaps you mean plants are simpler and cruder? At any rate, plants are way more sophisticated and much fitter compared to the animal kingdom. At the cellular level plants have 2 autonomous organelles that ensure completely sustainable and greatly independent cell energetics, while being highly efficient. Don't forget that the animal kingdom could arise only because of the waste product (oxygen) of pro- and pre-plantae forms of life.

Secondly, I never mentioned nutrition and I can never debate nutrition with someone whose basic knowledge about plants is none to zero. As I said, I'm neither a vegan nor a carnivore, I am trying to put together the entire map of biochemistry and human biology, and all available research to reach some, at least, basic conclusions about nutrition. Additionally, I do work in labs. I can tell you that there's a lot of adequate research and info already in existence about food biochemistry, but no one on youtube, except for some MDs and researches has any clue about what they're talking about. I can tell you that eating substance X and its effect on your body doesn't only depend on the nutritional value, chemical conatituents and contaminants of X but also the haemodynamics of the eater and its commensal partners at the time of eating. It's a very finely tuned and complicated equation with many variables. I won't go any further, because, I know I,m wasting my time.
      Just a perspective:
      Ikarians and Okinawans, among others, being the longest lived people on Earth based on predominantly plant foods and small amounts of animal foods shouldn't be mentally and physically all right at above 100, right? Wait, let alone being fit, they shouldn't be 90+ years old at all, right, because of your sane 'logic'. Good luck with your logic, quick conslusions and extreme decisions are usually futile.
