This is a good recipe. I added 1/4 tsp of baking powder 1/4 tsp of nutmeg 1 cup grated carrots Substituted Butter instead of oil. Baked 30 minutes at 350 in Mini loaf pans. Product turned out beautiful 😋. Thank you. Texture was lighter
