If you're in a swordfight, you want the high ground. The ground protects you from blows from below, and puts the enemy's head at the right spot to hit, and gives you a gravity boost to the mass of your swing. While they have to swing high and lose all their power just to glance off your greaves. This doesn't apply to lightsaber battles, because lightsabers don't have mass, will cut through the ground, and you lose your feet.

Anakin had already gone full darkside at that point, he should have just choked him out from across the field and force pushed him into the lava. He was stronger and had range. If you have a shield, you must now raise it up higher to block the attacks, and this means spending more energy to lift the shield. Where if you have the high ground, you just set the shield down. But let's say you are in a fight without a shield. Yes, you can swing at their legs easier, but blocking with the sword from the high ground is as easy as letting your sword fall while still holding onto it. This is a little awkward in the hand, but doable. Secondly, a blow to the legs is on average less lethal than a blow to the head, so assuming you are fighting an equally matched opponent, if you have the high ground, you live more times than if you had the low ground. And lastly, if you have the high ground, you can apply more force into your swing than you can from the low ground. This is because from the high ground, you have even more assistance from gravity than normal, and from the low ground, you are fighting against gravity to attack. This means more energy spent, and in a perfectly even match, this means the high ground wins in the long run. Think of trying to cut down a tree branch that is on the tree at head level, vs splitting a log that is set at waist level. One is far easier. And because there is extra power behind the attack from the high ground, this means you need to put more strength behind blocking to stop the blow from hitting. This wears you out faster, and thus, in the long run, you lose.
High ground in martial combat is about leverage and advantage, not about targeting. Swinging up against a hill limits the swings you have available and tires you out faster. Swinging down is much easier, gives you more options, and allows you to knock your enemy off balance easier.

On god, mechanic inflation is a serious issue. I was watching the game reveal trailers at the various e3-type conventions this year, and there was a survival game that had 16 different ways in which your character could be unhealthy. Game devs need to learn that more mechanics does not make something better. There's a reason why charge blade is one of the least used weapons in monster hunter.

To answer your question at the beginning of the video, I think there’s a few reasons why the high ground is superior 1. Biggest reason is energy consumption. it takes a lot less energy to swing down then keep your blade up. Your opponent will waste their precious energy far before you ever get tired. 2. Like you said, headshots are important, and on the high ground it’s much easier to get them. And while you can dodge them, that takes up a lot of energy, energy that could be used on other much more valuable things.

the lowground high ground argument is daft as hell cause yes while you attacking his undefended ankles. you're also attacking and not defending. assuming you're both of equal skill he gonna be attacking too. at your upper body. while you swinging at fucking toesies. and not blocking. and IF you're blocking. you gain a whole lot more power swinging downwards. then you do swinging upwards. there's literally no advantage to low ground in sword to sword combat. i know this from years of experience playing king of the hill as a kid with a big stick

They can still attack your feet while you know exactly where they'll have to attack (above). Basically you now know where they'll attack from and have better reach. If it wasn't a sword but rather a spear, sure. They'd be able to attack more areas because of the higher reach. But a sword? It's like how anime characters will always use a sword even if they're only fighting monsters. Swords (with exceptions like Boar swords -- but those are specialized for specific purposes) were designed to face humans -- not beasts. You're better off using an axe or spear when fighting beasts. The medieval weapon question is just hard to answer. I'll just pretend there's no me adding my own knowledge or using non-traditional weapons like a bolas or dart gun. The longbow would the most ideal weapon probably... but I also wouldn't want to be captured and have two of my fingers cut off to prevent me using a longbow again. The axe and mace are easy to use weapons but the axe doesn't do well against armored units. Realistically a mace doesn't as well even against plate armor. Sure... it might cause blunt damage but it doesn't pierce the armor. A sword is a better option even though it won't pierce the armor either. It has a better point of balance and is more versatile. Requires more skill and effort but better odds against an armored opponent. However... I doubt I'd be given a great sword. It'd probably be off balance and easy to break. Even then it requires training and you don't want to fight armored opponents in the first place. I'd want to go a spear. It has long reach, easy to learn (hard to master), and lightweight depending on the type. I'd have a good long hunting knife and maybe some short javelins as well. I'd want to be a light skirmisher ideally. Hit and run. More realistically.. I'd do my best to become a non-combatant. My math skills alone would probably get me a position.
I'm not sure you understand how thin the plates off of the torso were. Bending them by blunt force not only caused internal damage but also limited mobility, possibly allowing you to start getting into the more vulnerable areas covered by fabric or chainmail protection only. Piercing is not the only option when reducing the other's fighting capability is enough
