Puli Koddel | Ash Gourd in Savoury Coconut Masala - Authentic GSB Konkani Temple Cuisine

  • Welcome to Bapama's Kitchen! Today, we're whipping up a delightful GSB Konkani temple dish called Puli Koddel. This sweet and savory dish is a staple at festivals and special occasions, often associated with temple rituals. So, let's get cooking!
    Ingredients:
    600 grams Ash Gourd (Peeled and chopped)
    80-100 grams Jaggery (Adjust to taste)
    Salt to taste
    FOR MASALA:
    1/2 Coconut, grated and roasted
    8-10 Roasted Red Chilies (Ramnaad)
    1/2 Marble-sized ball of Tamarind
    1/4 teaspoon Hing (Asafoetida)
    1/2 teaspoon Turmeric powder
    2 teaspoons Coriander seeds
    1 teaspoon Cumin seeds (Jeera)
    1/4 teaspoon Fenugreek seeds
    2 teaspoons Sesame seeds (Til)
    3 teaspoons Raw rice
    1 1/2 teaspoons Lentils (Toor Dal) - A thickening agent
    Water for grinding
    TEMPERING:
    1 1/2 tablespoons Coconut oil
    1 teaspoon Mustard seeds
    INSTRUCTIONS:
    Masala: This is where the magic happens! Watch the video for the precise order of adding the masala ingredients.
    Cooking the Ash Gourd: In a pot, add the chopped ash gourd and enough water to cover it. Bring to a boil, then reduce heat and simmer until the ash gourd is softened. Then add jaggery and to cook
    Adding the Masala: Once the ash gourd is cooked, add the prepared masala paste and stir well. Let it simmer for a few minutes until the flavors meld.
    TIPS:
    Pay close attention to the video for the masala preparation order. It's crucial for the perfect Puli Koddel flavor.
    Don't overcook the ash gourd. You want it soft but not mushy.

    When I see Bapama cooking, it takes me back in time to when I used to watch my mum cook - love the authencity of the recipes, and love hearing someone using all the correct Konkani terms. I’m learning so much - thank you Bapama! So glad I stumbled across this channel!

    Yes. What Ashwin says is right. Even I have written the recipes, which I make at home at the insistence of my daughter and son. The pullikoddel is our family favourite.

    Awesome cooking!!! Loved the friendly banter too! It's true what you said; there are barely any videos on authentic GSB recipes with proper guidance on YT. It's either a personal take on dhalitoy, which tastes nothing like the ones we eat in temples back in India/Bharat. Please convey thank you to Bapama; she is very patient in explaining.

    I think it is Kuli Koddel, it's made out of कुवळ, so it's कुळी कोद्देल, we say like this
