For BBQ we just get a piece of meat with gut which is surrounded by fat dip it in a sauce which made of soysauce, lemon, onion, carlic , black pepper and fresh hot pepper.. .... If you grew up eating fish you gonna love it.... PS. The guy is the best part of this fish!

I needed to learn how to clean this fish. We call it “Tataga” on Saipan. Grilled right before the intestines explode, peel off its shark like skin and served with Clear Finadenè. Never had it raw, but should be magnificent using the Zukè method after smoking it with Binchotan. 🤔
We use to grill unicorn fish w/o removing the organs coz the fat of the fish's belly is the most delicious part ..we eat it w/our hands served w/ just plain calamansi juice kikoman soy sauce and chopped chili pepper and sided w/steaming hot rice along the beach and sweet Zambales golden mango after dinner

The guts are extremely fatty and it was a waste to throw it away. Best way to have this fish is soup, grilled (whole and ungutted, the fat helps keep the inside moist) , or smoked. I'll try deep fried like in this video, looks good.
Isn't the gallbladder a problem when cooking this fish ungutted? I can't imagine the fish tasting good if it burst while cooking and spilled bile everywhere.
