  • We're making Superfood Chicken Nuggets, a kid-approved recipe that can hold up as a lunchbox staple or quick and easy family dinner!
    Are your kids still eating chicken nuggets from the freezer aisle or...gulp...Chick-Fil-A? Even the gluten free nuggets in the grocery store can have problematic ingredients like seed oils, added sugar, binders, fillers and more, not to mention less than quality sourcing. These Superfood Chicken Nuggets are a wholesome, real food alternative that are easy to freeze and reheat for easy school lunches and grab-and-go dinners. What makes them a Superfood nugget is the Force of Nature organ blend we use as a base, providing a boost of B vitamins, antioxidants like CoQ10, and minerals such as iron and zinc. We also add in riced cauliflower to provide a lighter texture and a boost of detox support. All of our kids from 10 months, 3 years old, and 7 year old loved these while the adults enjoyed them with a boosted honey mustard sauce.     INGREDIENTS FOR CHICKEN MIX:
    2 pounds ancestral ground chicken (Force of Nature)
    1.5 tsp sea salt
    1 tsp garlic powder
    1 tsp onion powder
    2 eggs
    1 12 oz package cauliflower rice or 1 small head cauliflower, riced
    INGREDIENTS FOR BREADING:
    1 cup almond flour
    2 Tbsp coconut flour
    1 tsp sea salt
    2 tsp smoked paprika
    ½ tsp garlic powder
    ½ tsp onion powder
    Avocado oil spray for cooking
    DIRECTIONS:
    Preheat the oven to 400 degrees. In a mix bowl combine the cauliflower, eggs, ground chicken blend, salt, garlic powder, and onion powder. Hand mix until just combined. In a small bowl, whisk together the almond flour, coconut flour, salt and spices. Scoop the chicken mixture into heaping tablespoons. Drop into the almond flour mixture and roll to coat. Flatten into a nugget shape, then place on parchment paper. Repeat with the remaining chicken mixture. Spray the nuggets with avocado oil spray. Bake at 400 for 15 minutes, then flip and bake another 10 minutes. Check for doneness with a meat thermometer, you want the nuggets to hit 165 degrees internal temperature. If desired for a more golden brown, you can turn on the broiler for 2-3 minutes until golden.
    For freezing: Freeze in a single layer on a baking sheet, then transfer to an airtight container or bag. Reheat in the toaster oven for about 6 minutes at 350.

    Wow, I rarely leave comments, but these were so tasty I feel obligated! My 11 yr old son who despises anything gluten or dairy free ate these up willingly. We all loved your honey mustard sauce too. Thank you!!

    We lv these! I make a big batch and freeze them and then me and my kids just pop them in the airfryer as needed during our homeschool day. I figured up with the size I make them that they are roughly 5g protein each. Its amazing how 6 of them with some dip and veggies makes me soooo full. But in my younger years I used to be able to put down 12 easy at.....from u know where!😉

    I wish you would've put more options for the chicken because this company seems to not sell ground chicken anymore

      I don’t know of any other ancestral grinds of chicken at stores but you can likely get or request at your farmers market

    Hi! Do you think there is a replacement for almond flour since my kids go to a nut free school 🙂🙏🏻 ?

      You could sub ground pork rinds or GF flour or blend of the 2
