Nice setup you have there and maybe you got that idea from me, I created my DIY Cable Crossover Chest Fly/Functional Trainer setup 2 years prior to your video on Nov 2020.
Anyway, looks like your power rack is much better than mine - I have a very cheap Fitness Reality Rack but all the fitness equipment I bought was a result of the Chinese Covid 19 Global Pandemic and a surprise purchase as it was for many lifters.
My rack only accommodates M10 Bolts or 3/8" Bolts and so I can't get that long of an Eyebolt as you can - So I had to settle for 8" long EyeBolts.
My setup is way more complex and also stays on my Rack so I don't have to keep setting it up when I want to use it.
With my setup it's the better 1:2 Ratio - meaning that if I put 20 LBS on, you're really lifting 40 LBS - I know on most real Functional Trainers it's the opposite 2:1 Ratio where the lifting weight is half lighter than the actual weight.
I have a picture of my setup - it's a bit cluttered but if you look close you can see my blue custom cable and the 7 pulley wheels. I improved it since this picture was taken and now I have more of the Blue Pulley Wheels and it's smooth as butter.

Why not just buy another set of eyebolts for the bottom and leave them in, makes it easier to change. Good job 👍🏻

Very nice man. I see others in the comment section like myself seeing if you could share any links to specific stuff you bought. Would be a great help. Thanks for this idea

    Super clean work!
I also did this with two cables at first, and then I tried it with a single large cable and an extra pulley coming straight out of the lat attachment, and it works absolutely great. Found it much more "natural". For example, if you want to use only one side, as you have the third pulley and it's only one cable, you won't have a loose cable wobbling. in addition, the exercises seems more fluid and better to isolate some muscles.

You can use a shorter cable with chain so that way its more versatile
