    Just finished 12 pints of carrots! I used brown sugar and orange juice as my liquid for caramelized carrots. Thanksgiving is coming up and my Mom made them that way. Thank you so much for your tutorial. ❤️✝️

    Watching your instructional video before I pressure can some of our garden, fresh picked carrots. Might wait till tomorrow, I’ve canned chicken, chicken broth and ground beef already today. I’m tired.

    I'm experienced at canning, and this video was instructive and accurate. I would add, if someone is going to purchase a Presto canner, I'd recommend it's one with a dial gauge that clearly shows the pressure.

      Interesting, as I've reached the point, the gauge may be a nice to have but isn't really needed, if your Presto canner has the adjustable regulator and/or you convert the standard 15 lb version. I have 2 Presto dial gauge canners that came with the standard 15 lb regulator. One purchased in 1972 and the other in the mid 1990's. Both of these are the large, double stack pints versions. I wanted something smaller for smaller batches. Recently bought the Presto 16 quart, with adjustable regulator, without the dial. I don't miss the dial. Currently, I'm processing 8 pints of carrots. Yes, I'm canning carrots. :-)
      Sitting here, in the den, at my computer within sight and sound of my canner, waiting for it to reach 11 lb pressure. I don't have to stay at the canner and babysit the dial because I can't read it from the den. The regulator is set for 10 lbs. It takes 11 lb pressure to move the 10 lb weight. So, when the regulator starts to giggle (rock) I know it's time to start the timer and turn down the heat.
      Dial gauges are supposed to be tested annually for accuracy. If they don't register the correct pressure, they should be replaced. Every year that passes it becomes harder and harder to find someone to test. Many county extension services who use to test them for home canners have stopped. Unless damaged, a metal weight is more likely to remain accurate than a dial regulator, for a number of reasons.
      FWIW... I've used the adjustable pressure regulator to test the dial gauges on my 2 older canners enough to know, that I don't need to see the number on a dial to safely and properly use my canners. Providing I have the appropriate adjustable weight (regulator). On the Presto that I use the most, the pressure is at 11.5 lbs per the gauge, when the regulator begins to rock. Meaning the dial on this one is about 1/2 lb off.
      Just a bit of a difference of an opinion from someone who has been canning for a lifetime. An ACCURATE dial gauge is nice to have, but isn't really a necessity, unless, perhaps living at an altitude between 1,000 ft and 8,000 ft and want to be very precise.

    Thank you for this! This was the first year we successfully had carrots grow! We planted a bunch just because we usually fail so we were trying to just get SOME.. well, now we have more than enough so I am so excited to can them!

    I wasn't pressure canning because all the canner's said not to use on glass top stoves! This is great that you proved that you can!

      +nms886 Danny had been canning on this stove for 6 or 7 years. Just be careful to not drop anything on it. The canner is heavy. That is the key. Thanks

      +nms886 I also can with the same canner(Presto-16 qt) 0n my glasstop for the last 6 years with no trouble. Just like Danny said have to be gentle.

    Wanda, I grew up canning with my Mother, so I Still Lots Of THINGS THE Way she did. One thing I learned in later years, when we open a jar of any food to eat, we wash the empty jar, the flat piece and the ring. When dry, the flat piece is put upside down on the jar and screw the band on. Next use of the jar, yes it is dusty on the outside and all get washed in hot soapy water, but the inside of the jar is still clean. We don't use our flat pieces a second time but I have heard several ladies say if they don't look bent from opening, they reuse them. I just don't trust them and don't want to lose a precious jar. Love to watch your dideos and your dazeys videos to.

    Thank you for the video. I'm going to start canning next year, because I'm tired of wasting food that I've worked so hard in the garden all year. The wife and I can only eat so much, and we give a lot away to our family and neighbors, and still have a lot left over, with my 8 gardens. Going to subscribe to your channel. Thank you again.

    NICE JOB I HAVE A BIG FAMILY AND LAST SUMMER WE DID 44 QUARTS AND 16 PINTS OF CARROTS THE PINTS WE USE FOR SOUPS STEWS STIR FRYS THE QUARTS ARE SERVED FOR MEALS THERE ARE 10 OF US THATS WHY I USED QUARTS.

    Wow Danny. That's a lot of carrots. Yummmy. I like to pickle a batch too. I make them more like long peeling shreds, using Ball recipe for misc pickling or garden rummage. They're awesome in a kale slaw or as salad topping. I just put themin jelly jars, since a little goes a long way.

    No de-bubbling for cut up carrots? I’m a new canner, so I don’t know. Those are some beautiful carrots! I think everything has to be de-bubbled..

    I canned some carrots and 2 lids has a slight buckle in them. I checked and they Are sealed, no liquid coming out. Should I just freeze them or do you think they are ok to put in the pantry, or just eat them. Thamks

    Beautiful. Wondering if you have ever tried "tattler" reusable canning lids. I have been using mine since 2009 and love them. They are a bit of an investment but well worth the money. I kinda miss the little "tink" medal lids give though. Great video.

    Great explanation on the canning. Do you leave the rings on when you put them in the cellar? I am going to do a lot more companion planting in the garden this year, do you companion plant? You could throw in some more carrot seeds with the tomatoes. Take care, awesome video. Cheers!!

      +Joshua Smith We take the rings off the next day. We learned the hard way to take them off. If left on many times they will get stuck and you cant get them off. We do companion planting a lot.Its how we control insects.

    Very informative video. Can you use Kosher salt in replacement of basic or canning salt? And if not about how long does canning salt last for?

      Salt does not expire. As long as it is kept dry and clean, shelf life is indefinite. Any salt that doesn't have additives to prevent it from caking can be used. I prefer to use canning salt, as I know what I'm getting. Fine grain Kosher salt is an alternative for "canning salt".

    I canned my first ever carrots using your video as a guide! Thank you for such an educational video. Do you know why I would lose liquid in one jar? The liquid is about half what it was before I canned it.

      That 1 jar possibly siphoned which is not anything to worry about! As long as the jar is sealed you are good! One thing you need to remember is to check your jars periodically especially if you leave the bands on them because you will not know if you have a false seal or not! Best thing after they have cooled off within 24 hours take the bands off wash your jars dry well and leVe bands off

      It is a presto. Not expensive but it has worked well for many years. We just bought a new gasket. Thanks and good luck.

      Do one have to use a pressure cooker...? I have a regular big stewpot for slow cooked meals... maybe around 25 liter... would that work or you recommend purchasing a pressure cooker?

      Caroline Södergren - to answer your question, no you cannot use your pot. For canning you need a pressure canner following the manufacturer's instructions regarding the actual a,pint of water needed in the canner.

    Any reason not to heat up the lids and rings in the canner while it's heating up? I did that the last few times and it saved space and energy heating up another pot on the stove.

      +steelhorses2004 Yes, you can do that. We found out that they have changed the process for the lids. If you go to the website for your lids, it will tell you not to boil the lids. It just suggests lukewarm water. We get ours in hot water on a low heat on the stove. Check out the brand you buy to see if they have suggestions that differ from the way things used to be done. The package does not tell you this, only on the website. Thanks hope this helps

    I hate to bother you with this question but I’m getting mixed answers online, and can’t find it on the presto sight... What’s the minimum pints you can can in the presto? Should I fill space with jars of water without lids? Thanks guys

      Our Presto will hold 9 regular pints or 8 wide mouth pints or 7 quarts. If you don't have enough to fill it, just can what you have. No need to fill the spaces unless you want to. Remember, squash, green beans, potatoes and english peas all can at 40 minutes for quarts and 35 for pints. You can put any of these in jars and can at the same time. I had some english peas, some jars of green beans, some of squash and 1 potato.

      +jacki comber Yes, they can be put in jars. Check a Ball Canning Book for how to and how long to process. Thanks. We canned tender greens last year. Great way to have a supply during the hot months when they won't grow.

      We don't peel the carrots we grow, but we scrape them to remove the root hairs on them. Thanks

    Do you date your canned carrots? Don't you have to scald your jars before you can? I know you washed them in hot watrer.

      The water in the back of the stove is boiling water. Each jar is in the boiling water before use.
