Even though I live in a small village, I purchase all my produce from local farmers. Anyway, I obviously don't have farm animals to feed my scraps to 😉 What I do is spread them over my flower beds and small garden. I figure the birds, squirrels etc will eat whatever they want and the rest will decompose making my soil richer. It's worked great so far because everything I grow is happy. Oh, don't worry about smell while stuff decomposes, my back yard is rather large
We call that "Chop And Drop" and we do much the same here... The animals get some trimmed snacks, but spent plants and most everything else is just turned right back into the gardens... To which we add the manure from the birds we fed the scraps to... LOL So it all comes full circle....
Your carrots will look pretty on your pantry shelves. They will add so much color. Best of all they will look pretty on your supper table! I worked in my bucket garden a little bit today. Harvested some more tomatoes and peppers. Also killed quite a few bugs off my pepper plants. They were fast little devils but I caught a bunch of them. Lol Yall take care. God bless.

My wife has been canning some this year. She made pickles, Zuchinni Relish, green tomato relish, pickle relish, salsa and she canned several quarts of tomatoes. We may have to buy some carrots and can them. She cannot seem to find canned carrots in any of the stores down here. Are you and Mark having a hard time finding some things at the store up in Greenville. I love the Greenville area. Years ago, I dated a girl that lived in Greenville. I drove 165 miles one way just to see her. Still loving your channel and your garden. We have decided to expand our raised beds and do away with our inground garden. That bending over when you get old is for the birds.
Greeneville has a really nice farmers market, which we have used from time to time... And it sounds like your wife has done more than a little canning... LOL

They are solid enough to eat with a fork... The trick is to add them to like a roast / potatoes with just enough time for them to get hot... Then they come out like you had cooked fresh carrots in with the roast from the beginning...

Nice! Question, some of the jars, the water level was lower than the carrots. Will that cause any problems with those carrots not submerged. I was watching an earlier video of yours on canning vegetable soup. One ingredient was "Carrots" fresh, taken out of cold storage. Didn't know you had a root cellar. If not, how are you storing them? The carrots might discolor a little being out of the water in about a year... We will have eaten them long before that... I overpacked the jars a little to keep it to 3 loads... As for cold storage, I was likely just talking about the fridge....
Do you need to peel the carrots? Could you explain the difference between canning salt and say pink salt or regular salt?< yes I dont can but might try it next year. And try and slowly build up all the equipment you need. Have a good evening 🌻🌻🌻
We peel them because botulism lives in the soil and can be embedded in the skin... As for salt, canning salt does not have additives like anti clumping... regular salt has the additives and can make jars cloudy... pink Himalayan salt has lots of minerals, but we rarely use it for canning... canning salt is the way to go...
I'm curious about the water level. Usually when I can the water is at the top of the produce in the jar but when I take it out of the canner it's an inch or so below the vegetable. Does that ruin the vegetable that aren't submersed anymore in the liquid?

Tricky topic... Botulism lives in the soil... The skin is in contact with the soil, and porous so it is hard to deep clean... The temp should kill it... And you should be able to... All I can tell you is what I know...
Hmmm... Well, if you like carrots with a roast, what you do is cook the roast and potatoes until they are about 30 min from done, then you add the carrots so they have time to get hot... Then all will seem like the carrots were in there the whole time... Same amount of "cooked" as you would expect...
you may not believe this but am a old granny who constantly thinks of easier ways to do things--and one of which is==I ran green beans, also carrots in a washing machine with those tough scrubby pads.....after a full cycle I had clean veggies and just took them out, then collected what was left around the drum and the pads--ok don,t laugh but hey it worked! God bless. PS==I did not add soap lol.

You can wrap the ends of hot dog tongs in masking tape and use them as bug squishers !

We cooked some down with brown sugar and pumpkin pie spice and a little cinnamon... Boy was that good !

Ideally, yes... But they are fine above the water... And yes, they have to be pressure canned (not pressure cooked)...

Most things are 15 min shorter for pints than quarts...
So when you open a jar of carrots are the still a bit hard yet, soft, or Mashable.

They are softer... They dont fall apart on a fork... But they are not crisp...
