I had this lamb at a restaurant near El Calafate in southern Patagonia. It’s incredible. I loved seeing these huge racks of roasting lamb all over the country, Max might be the Meat Guy but Argentina is the Meat Kingdom

I spent 3 weeks traveling around Southern Argentina (El Calafate, Ushuaia, and Bariloche), seeing and experiencing the country where my dad is from. I looooved the asador lamb they have there! It's soooo good! And it is a hell of a sight to see in the windows of some restaurants!

I love seeing these traditional Argentinian cooking style videos.
I was born in Uruguay but live in California since I was 1 years old. Every time I have been back or go back I love my parilladas! They are the best ever!
I’d like to point out thal Al calls that grid a “cross” because the traditional device is just a large iron “spade” with two horizontal bars and a hook on each point to hang the lamb’s legs spread open. It is usually just hammered into the ground at a certain angle /distance from the open fire. Of course this version is much more easy to handle/turn it over etc but the “spirit” is the same. You just need a couple of bottles of good malbec to “marry” that beauty!

Here in Serbia spit roasted lamb and piglets are considered as delicacy. Now I know how to impress my friends with something new.

I remember my uncle making the salmuera but he crushed a few garlic cloves to add to it. He used to grab a plastic soda bottle burn holes in the cap with a hit nail and use it to spray the lamb with the salmuera… I miss those days

Now that's an amazing way to do it. We do one every easter by do it on a rotating spit over open fire. I've tried cooking lamb a lot and it is never as good as when it is cooked over open fire for several hours.
