You can just need to start in the right place. Check out soft trucks or skater trainers as tools to help you start with your ollie without the fear of rolling.
You're right the trainers are cheats but cheat on man if it helps! The skater trainers don't fix the fear of rolling they just let you learn the movements without any rolling first so you don't have to try and learn moves while rolling. This way you have some muscle memory before just getting after it. When you go back to rolling you need a careful approach that focuses you on one part of the ollie at a time. For example start with just jumping off the board and landing back on it. Then try jumping and lifting the front foot and landing off the board. More steps than this of course but just an idea. I'll be releasing a series of How to learn the ollie basics videos with recommended steps for practice to help! Not ready yet but stay tuned:)

Put on pads and practice falling and bailing to get an idea of how to bail safely and you get less scared too. Now anytime i try something, I plan out how to bail, and practice bailing. Then I feel better trying the obstacle

I already got the skater trainers but i feel like cheating using those things. When i take them off, i will be scared as hell of moving.
